Cinnamon Cookies II

These were amazing but having just baked the big and chewy chocolate chip cookies and having read reviews I did alter the recipe. I made the following changes: -1 cup white sugar, 1/2 cup of light brown sugar (didn't have plain brown sugar) -I did the one egg and added an egg yolk(at room temperature instead of right out of the fridge) -1 1/2 tbsp of vanilla in place of the molasses (I love cinnamon too much and wasn't going for a gingerbread taste) -2 tbsp's of cinnamon instead of 1 -I melted the one cup of butter and let it cool to room temperature before using it -I only used 1 tsp of baking soda instead of 1 1/8. Honestly, I just didn't have the right measuring spoons but it still turned out fine. -I added 1/2 tsp of salt and used salted butter because it was all I had -Cooked for 13 minutes exactly after rolling into tbsp sized balls Delicious!!!

Creamy Cream Cheese Frosting

I mostly went off of the Cream Cheese Frosting II recipe on this site but did just 1 cup of sugar and 1/2 cup of cool whip and it was awesome. I don't like frosting that is too heavy or too sweet!

Cream Cheese Frosting II

I would have given it that extra star had I not had to alter it quite a bit. I was glad I was tasting it as I was adding all the sugar because I'm not a fan of buttercream frosting (i think it's way too sweet) so I ended up adding half the sugar it requested and added a 1/2 cup of cool whip as well. It was wonderful this way. I kind of went off this recipe and the Creamy Cream Cheese Frosting on this site.

Favorite Old Fashioned Gingerbread

My boss is OBSESSED with gingerbread everything. So I found this recipe when I wanted to make her a birthday cake last year. She loved it. She requested it again once fall came around and I'm sure she'll be dropping some hints come her birthday again! I make homemade whipped cream cheese frosting to top it with and I double the spices to taste.

Pumpkin Cheesecake I

This recipe is great if you are wanting a light pumpkin dessert. I make this one and the Double Layer Pumpkin Cheesecake on this website. The Double Layer Pumpkin Cheesecake if much richer so it's all in what you're in the mood for.

Double Layer Pumpkin Cheesecake

When I make this I don't bother separating it at all. I just blend it all together to pour into the crust. I also buy the keebler graham cracker crumbs and follow the recipe on the box for their crust. By doing the crust this way it's much richer and everyone raves about it. Sometimes I will take caramels and evaporated milk and melt them in the microwave and spread the sauce over the cheesecake once it's cooled as well. Either way it's fabulous!

Easy Rum Cake

Everyone loves this rum cake when I make it. I only use Spiced rum in the cake and in the sause on top. I've also found that when I wait for the cake the cool before I poke holes in it with my fork and pour the sauce on it, it doesn't like the absorb the sauce easily. It just ends up pooling in the center and I use half the sauce that way leaving on the very top and center tasting of rum at all. When I poke holes and pour the sauce right out of the oven it tastes amazing and comes out perfect everytime. Thanks for a great recipe!
