Pasta e Olio

Delicious! Took some others' suggestions and added basil to the oil and (used extra (4-5 cloves) garlic. I had a tube of prechopped fresh basil leftover from another recipe, so used that (the whole tube). I added half a stick of butter to the garlic mixture then dumped it onto the angel hair pasta. Yumm. Will definitely make again.

Easy Garlic Broiled Chicken

Fabulous and as easy as pie - no...much easier! lol. Made exactly as written using chicken thighs (with bone)(extra 10 minutes broiling on low) and it was a hit! My son came downstairs during the cooking and said, "wow, it smells really good!" I said, yea, that's what a lot of reviewers said! I added asparagus to the pan for the last 8-10 minutes of broiling and it was delicious!

Hash Brown Casserole II

Heaven!I didn't have time to thaw the hashbrowns, so instead I put a couple Tbs oil in a large frying pan, threw in the hashbrown and browned them. Then instead of melting the butter, I just threw it in and it melted with the potatoes, stirred in cream of mushroom (instead of chix), and the remaining ingredients. Popped in oven in covered dish for 30 mins, then uncovered and added the rest of the cheese and the cornflakes for another 15 mins. I tasted it before serving to my family and one taste turned into 7 before I finally could break away from it! Served with Ham steak, Hollandaise sauce covered asparagus, and Hot fudge sundaes. (It was "H" night this week. Gotta start looking for "I" foods now!)

Sunday Morning Lemon Poppy Seed Pancakes

Delicious - like a light and fluffy lemon-poppy muffin! I doubled the recipe and used half whole wheat flour. I used 4 tsp lemon juice and 1 tsp vinegar instead of all the called for vinegar, and the zest of one lemon. Yum. Kids loved them, too.

Sour Cream Burgers

I love the idea of sour cream in the burger. I never would have thought of that on my own. I didn't have soup mix, but I had a .07 ounce package of garlic onion spice dip mix that I used. (I made a burger once with soup mix and did not care for it anyway). Delicious! But, 4 stars because it is a little mushy. Maybe more bread crumbs next time, as other reviewer have suggested. I used Muenster cheese and topped it with a generous slice of avocado. Yumm yumm!

Meatball Nirvana

Out of this world! These meatballs lived up to their name! I am not a big fan of Worcestershire sauce or hot sauce, but I added them anyway to stay true to the recipe and, wow! Delicious! Used an egg instead of the skim milk, but otherwise followed to a T.

David's Yellow Cake

ok, I screwed this up and it still came out good (but didn't rise much (which I am sure is my fault). I was making it with my 7 yr old so not paying as much attention to the steps as I would normally. she cracked all the eggs (whole) in with the butter. oops! so I just threw in the sugar and attempted to cream them all together. didn't work so well, lol! So threw in the dry ingredients (didn't have cake flour so used AP), only had 1/2 tsp vanilla so I added 1/2 cup of OJ and omitted the milk. We poured it into flat bottom ice cream cones and baked for 20 mins. they didn't really get much over the top, but the flavor is great and we just made up the height with icing! the kids loved it!

Boilermaker Tailgate Chili

Best chili I've ever eaten! I didn't have all ingredients so skipped the sausage and used ground turkey, kidney rather than chili beans, 3 cans diced tomatoes, no paste, no bouilon, can of beer, chipolte hot sauce, added jalepenos, sweet onion, no bacon or celery. can of fiesta corn and juice of a whole lime. cut veggies into strips then used a food processor to slice. turned out larger than chopped but hearty - and way easier than chopping it all!

Simple Slow Roast Chicken

Delicious! And so simple! I had planned to put this together the night before for my 15 yr old son to pop in the oven at the right time the next day. I forgot, so I called him and he followed the recipe and made it himself! Let me add, the most my son has ever cooked was grilled cheese. I recently decided that I'd never taught him how to cook and should do so soon! I'm a single parent that just didn't take the time to show them. Well, here was my chance, albeit over the phone! When we got to the onion part, he said, "what's an onion?" Oh please, he really didn't know what an onion looked like? Well, he figured it out and I talked him through quartering it, etc. He then asked where he should put it. I said shove it up the same hole that you took the bag of stuff out of. lol. My other two younger kids loved the chicken too and we are going to all start cooking together!

Pumpkin Turkey Chili

Great base with the pumpkin. Needed doctored though. I used leftover T-day turkey, skipped the peppers, added extra can tomatoes, can drained black beans, can veggie stock, frozen corn, 3-4x the chili powder, dash or 2 of hot sauce, a few jalapenos pepper slices, and cumin. Delicious!! and spicy!

Better Than Best Fried Chicken

The kids loved it (so if you're making for kids I'd give it 5 stars!) But I found it bland, even after following advice of super spicing. But I give it 4 because the crust texture was fabulous and the chicken (tenders and boneless thighs) was very juicy - just as promised. I never was able to make fried chicken because I burned it or the batter fell off, but now I can! Will use batter to coat veggies, etc. I'll just have to play with the spices. Oh, and I used cream of mushroom soup, onion powder, garlic powder, poultry seasoning, paprika, pepper and parsley. I think the leftovers will be really good heated up to top a salad.

Lentil Cakes (Patties)

Excellent "burger". I did not have any cereal so used saltine crackers instead. Added bread crumbs to mixture rather than rolling them in it. And used egg yolks instead of whole egg and soy milk instead of milk. Patties held together well even on the grill. Next time I will make the patties a little less thick, but definitely very moist and delicious. My teenage vegetarian loved them! And me too! Way better than store bought.

Homemade Black Bean Veggie Burgers

Delicious! I used a packaged dry marinade - garlic, basil, tomato - in place of the chili, cumin and hot sauce and left out the green pepper since we don't care for them. Also followed advice of others and added corn, patted dry the onion, and used 2 egg yolks instead of one whole egg. Wish I would have doubled the recipe and had some leftover to freeze!

Apple Pie by Grandma Ople

Wow. They say the way to a man's heart is through an apple pie. Well, if that's the case - this is the pie to use! A guy friend of mine had a slice and said that it was the best apple pie he had ever eaten. Said it would win contests. (And he didn't know that Moshasmama had already mentioned that she has won contests with this recipe!). I did follow the other suggestions of using cinnamon, vanilla and nutmeg in the sauce and putting the apple slices into the sauce before putting them into the shell. Delicious pie! Edit: the second time I made it I followed the recipe to a T (ie. no added spices or vanilla and put the slices in pie then added sauce). It was even better the way it was meant to be made! I won't be "doctoring" it anymore!

Mom's Zucchini Bread

Delightfully moist! Did the 1/2 oil/1/2 apple sauce combo and pumpkin pie spice. Also used 1 cup brown sugar in place of white sugar total two cups as others have suggested. Used cinnamon chips (Hershey's) and sugared the side of pan rather than floured. Was fantastic! EDIT: Was going thu my recipe box tonight and realized I'd totally forgotten about this recipe. I didn't plant a garden this year so no problem Zuchs. Kicking myself for not picking up more at the farmers market this morning. Argh~!
