Cocoa Banana Bars

I make these all the time for Potluck...the only bad thing about them is keeping DH from devouring them all before-hand! I usually put the chocolate layer on top so I only have to use one bowl. I also sometimes add walnuts and/or chocolate chips. Yummy!

Whole Wheat and Honey Pizza Dough

I am so glad I found this recipe-I have been wanting a fast whole wheat pizza dough recipe. Very easy and tasty. To keep the dough from sticking to the pan, I sprayed the pan with cooking spray, then sprinkled it with grated parmesan (the kind that comes in a plastic jar) and cornmeal.

Herbed Dumplings

Loved this recipe. Reduced the salt per reviews. I will play around with the herbs, based upon the type of soup I am making. This is my new standby dumpling recipe.

Mini Corn Dogs

I liked this recipe idea, but made some changes to make it suit my tastes. I used a cup of cornmeal and a cup of flour as I wanted a strong cornmeal flavor/texture. I also added about 2 tablespoons of sugar to make it sweeter. Once the dough was made, I had to stir in some extra flour to be able to handle it. I also floured my hands really well between forming each corndog.

Apricot Lentil Soup

This is absolutely delicious. I wasn't expecting more than an ok result as I don't consider lentils the most exciting food, but I went back for seconds, thirds and even fourths! Changes I made were: replaced the chicken broth with water and a tablespoon of vegetarian chicken-style seasoning, replaced the fresh tomato with a can of chopped tomatoes(drained) and used the juice of half a small lime. My husband loved this as well, and I will definitely be making this again!

Espresso Biscotti

This was my first time making biscotti and these were delicious! I made a few changes based on what I had on hand- I used salted butter instead of unsalted butter, 2 tsps instant coffee since I couldn't find instant espresso, 1/4 tsp. orange extract instead of the zest, and 3 1/8 cup all purpose flour. I drizzled the biscotti with melted white chocolate and chocolate when they were cool. I really liked the combination of flavors in this recipe.

German Apple Pancake

Yum! I have made this for brunch the last two weekends. I followed the suggestions to use a pie plate to bake and to use 2 apples and less butter in the pan. I also used more cinnamon and nutmeg, in addition to sprinkling over the sugar in the bottom of the pan, I stirred in cinnamon and nutmeg with the sliced apples. Very yummy!

Cranberry-Pumpkin Cookies

These were delicious. I did not have orange zest so I used 1/4 tsp. orange extract. I also used pecans since I did not have walnuts and I added 1/4 tsp. each of ginger and nutmeg. I used craisens since I usually find fresh cranberries too tart for my taste. My husband loved these cookies because they were not overly sweet...he usually tells me I should cut the sugar down, but these were just right.

Best Chocolate Chip Cookies

These were pretty good, but a little too sweet for my taste. I usually just make the recipe on the back of the chocolate chip bag, which calls for less sugar in proportion to the flour than these and I often cut that amount of sugar down. I would reduce the sugar somewhat (although this would alter the texture) and I would also follow the suggestion mentioned to increase the brown sugar and decrease the white sugar for a richer flavored cookie.

This is a very good pumpkin pie recipe. I do not care for cloves so I eliminated the cloves and allspice and increased the cinnamon to 2 tsps.

Corny Corn Bread

This is one of my favorite cornbread recipes. The original recipe has too much oil for me so I use 1/2 cup oil and 1/2 cup of fat free plain yogurt. I also do not put onions in it, although it would probably be good with them in.

Quick Butter Croissants

These croissants are delicious. It has become a family tradition to serve them at holiday meals. The fact that the dough is started the night before is really helpful during the last minute rush of meal preparations!

Moroccan Couscous

This dish is delicious and very quick to prepare. I am vegetarian so I replaced the chicken broth by adding the juice drained from the garbanzos to enough water to make 1 1/2 cups liquid and adding some vegetarian chicken style seasoning. I also added 1 tsp. curry powder, 1/8 tsp. garlic and increase the allspice to 1/2 tsp. since I did not have the cardamom or coriander on hand. Instead of orange juice, I use water with 1-2 tablespoons of fresh lemon or lime juice and leave out the orange zest. I did not think I would like the raisins in this, but they added a nice bit of sweetness and blend nicely with the flavors of the recipe.

Tabbouleh I

I love this recipe and have made it several times. I leave the seeds in the cucumber as I am too lazy to remove them. I also substitute a finely chopped onion for the green onions as I usually don't have green onions on hand. I like this salad because it tastes refreshing and is healthy and filling.
