Homemade Tomato Basil Pasta Sauce

Delicious! I was concerned at first, but it turned out lovely. Here's some hints I found useful: if using dried instead of fresh basil, use only four teaspoons. I also found that I didn't need the 1/4 cup water, and added used two tablespoons whole wheat flour rather than one all purpose. Also, you can just use a 28 oz can of diced tomatoes, and if you want to save some calories, only use one teaspoon margarine rather than a tablespoon butter, and omit the oil. It will still taste great.

Healing Cabbage Soup

Delicious! But I found a few more ways to cut some of the calories off. First, I didn't use any oil (I just put the onion in the water/chicken broth mixture) and since I had no canned tomatoes on hand, simply used two small chopped ones. I still found it delicious, and have made it two times more since.

Garden Veggie Pizza Squares

Delicious! I couldn't find ranch cream cheese or even a package of ranch dressing mix, so had to use plain and I still loved it! Thank you for giving me a new favourite meal! As a side note, for the crust I just used a pizza crust recipe already on allrecipes to be healthier and save money.

White Almond Wedding Cake

DELICIOUS! I made this cake for my birthday, didn't change a thing about the recipe and everyone LOVED it! I can't tell you how many people wanted three or four pieces. If making this, be prepared to have a lot on hand!

Freezer Vegetable Soup

My mother loved this, and made a point to tell me how delicious it was. As a tip, for extra flavor, instead of using 2 cups of water, I used 2 cups of vegetable broth. Yum! UPDATE: I want to stress that you DO NOT need the broth to eat this soup. To keep the sodium out and make it healthier, I just made it with water the last few times, and loved it! Trust me, you're not missing out on anything by just using water, and you're saving yourself some serious salt content.

Almond Biscotti

It was lovely! I was upset to find that I didn't have any almonds on me, so substituted 1/2 teaspoon almost extract, and my boyfriend still raved and asks me to make it again. Thanks!

Strawberry Jam

It's delicious, but honestly, both my mother and I found it to be too sweet. I think I'm going to cut the sugar back by a cup next time I make it. I used frozen strawberries, and blended them in a food processor to smooth them out. It worked quite well.

Banana Smoothie I

Delicious! And I omitted the egg! There's something very ice-creamy about this smoothie to me. The reason for the egg omission was only because the idea of drinking a raw egg just turns my stomach the wrong way, but even without it, I loved this recipe! Will definitely be making this again.

Sunday's Apple Pie

Let me tell you something: I made this pie for my boyfriend's family, and his father said that it was better than his mother's (my boyfriend's grandmother's) pie. That's all that needs to be said for how great this pie is.

Spicy Baked Sweet Potato Fries

I don't understand why these fries don't have a five star rating--they're delicious, AND healthy! My mother and I made these for Thanksgiving dinner (we're Canadian--that's October for us) and loved them. Hint: if you don't like spicy foods, leave out the cayenne pepper.

Rich Pasta for the Poor Kitchen

I'll put it this way: my mother thought that it tasted a little fishy, but said it was "ok", while my boyfriend polished off his entire serving and then some. I'm averaging their ratings. For the record, my boyfriend has no idea how my mother thought it tasted "fishy". I think this recipe is a matter of taste, so I recommend that you know your crowd.

Summer Vegetable Salad

It's a little vinegary for my taste, but still delicious. I will definitely make this again, and maybe just cut back on the vinegar a bit. I do have a tip though: your life will be MUCH easier if you add all the dressing ingredients into a food processor or blender. Trust me, it's a massive time saver.

Beth's Spicy Oatmeal Raisin Cookies

While I personally am not a fan of oatmeal cookies, my family loved these! As a note, if you don't have the shortening, you can just use another 1/2 cup of butter - you'll be fine. I also omitted the raisins, as I didn't have any on hand, but I heard no complaints. Yum!

Garlic Croutons

Delicious! Here's the thing: you don't need to use french bread. You can use any kind. I used two hamburger buns that I had leftover. I cut them up, sautéed them with 1/2 teaspoon garlic as I didn't have a clove on me, and then baked as directed. Will definitely be making these again.

Fresh Pear Pie

Don't get me wrong; this pie is delicious. I'm just a little disappointed that it doesn't taste like a pear pie. Both my mom and I agreed that if we didn't know it was pear, we would think it was apple. As for the recipe, I didn't change a thing. UPDATE: I figured out why the pie tasted like apples - the pears weren't ripe enough. If making this pie, make your your pears are as ripe as they can be before cooking them. Happy baking!

Microwave Peanut Brittle

Delicious, but BE CAREFUL. The first batch I made turned out perfectly. I used a glass pyrex bowl, followed the instructions for my 700 watt microwave and all was well. The second batch, I microwaved everything in my tubberware bowl. BIG MISTAKE. It completely melted through the bottom of the bowl so not only did I ruin my bright yellow bowl, but I couldn't eat the brittle either as melted plastic was contaminating it. So, be warned. Use glass bowls.
