About this Cook
I am a stay-at-home mom to four terrific boys who love to eat. Along with helping my husband run his business, I spend most of my time shuttling the kids to and from their sports/activities. I like to be creative when I cook, always looking for a way to change a recipe to make it my own. When possible, I try and lighten baked goods by replacing some of the oil with applesauce.
My favorite things to cook
Right now, I'm into fast and easy recipes, with few ingredients. I don't have alot of time @ night, running to and from sports games, so the quicker the better!
My favorite family cooking traditions
Every Friday night is pizza night @ our house. I make 4 different pizzas, so everyone gets their favorite. At Easter, I host a pot luck brunch. I bake a ham, potatoes, and rolls and each family brings a side dish.
My cooking triumphs
There's a recipe I have for pan-frying fish, my kids named it "Fish from the Heavens". As a bonus, it uses very little oil so it's light and healthy too! I don't make it as often as the kids would like. I also make a killer stromboli.
My cooking tragedies
Every once in a while, I get caught up doing too many things at once. If cooking is in that equation, chances are something gets burned.

Ham and Beans
I forgot to read the reviews before I starting making this. Wished I had, because it is too sweet. One tbsp. would be enough. Used only 1/8 tsp. cayenne and it was plenty spicy. The flavor is similar to baked beans with all that brown sugar. I will keep searching for a creamy white bean side dish.

Farmer's Salad
I've made this salad before, making only half the dressing along with a splash of milk to thin it just a bit. I also halve the bacon, who needs an entire pound of bacon in their salads?!? Doing this will cut the fat and calories, but retain all the flavors that make this salad so yummy. Adding some red onion, peppers, cukes, tomaotes, etc. is also delicious.

Applesauce Bars
LISTEN UP: for those of you who want more of a bar and less cake-like consistency, double all ingredients EXCEPT for the egg, and use a 9x13 pan. Less egg=less fluffy. I used 1/2 wheat flour and added raisins and they were TERRIFIC bars.
