Linguine Pasta with Shrimp and Tomatoes

Made this with a few additions which truthfully probably make this recipe a lot different than the original, but this recipe is still really great! I added red pepper flakes, more garlic, and used canned tomatoes since that is what I had on hand. One reviewer described how they dressed their dish up with heavy cream and some capers... Well I had a little of both so I added that as well! The cajun seasoning and the red pepper flakes made a delicious heat, but we like heat so season according to your tastes! I will totally be making this again. Leftovers were gone the very next day (usually our leftovers hang out for a little while first!)

Lemon Garlic Tilapia

Very delicious recipe and a great "Base" recipe. You can switch it up a bit and it will likely still be delicious. I stuck lemon juice, butter, garlic cloves, fresh dill and a pinch of cayenne pepper and sea salt in a little blender. I spread this mix on my fillets and followed the cooking instructions (375 for about 25min).. They were mighty tasty. Thank you for providing a starter recipe that one can expand on! Yum!

Tender Italian Baked Chicken

Great basic breaded chicken recipe! I added some more spices & cut my thicker chicken breasts into halves so that they would be thinner and cook crispier - like some reviewers suggested. Easy to execute, and quite tasty! Chicken was so moist when it was done, and fiancee enjoyed his meal very much. Served with green beans and mac & cheese!

Super Chicken Casserole

Very yummy, adjustable basic recipe! I didn't have cream of broccoli, so I used cream of mushroom. Used canned chicken. Didn't have mozzarella so I used more Parmesan & some other white cheese (white cheddar? that I had in my fridge. Still very tasty, easy quick meal for those days your fridge is empty or you are crunched for time :)

Coconut Bread Pudding

I really loved this recipe, which I found after searching snacks with coconut milk as an ingredient. I made this for my book club. It was my first time ever making a bread pudding, and I think I did pretty well! I got the bread from the bakery sliced up into small pieces just for the recipe. Since they didn't have any day-old bread they recommended I stick the pieces in the oven at 350 for a short while. I did so with the fresh french bread in a 9x13 glass pan for 15 minutes and it dried the bread up to a great day-old consistency. Also omitted the fresh coconut and used more shredded coconut. Next time I am going to review the reviews (ha!) and add raisins, more flavor options, etc to give the dish some more interest.

Spinach and Cheese Stuffed Pasta Shells

OH My gosh, was this recipe delicious! Adaptable and customizable too. I made the recipe as listed except I didn't have fennel. I used fresh spinach, cooked down and stuck it in to the food processor with the ricotta, parmesan and whole cloves of garlic. Easy peasy! I scooped the processed filling into a ziploc bag and cut off the corner. Piped the filling into the shells. SO tasty and my fiancee was completely in heaven. Will be making this recipe again!

Slow Cooker Cilantro Lime Chicken

THIS WAS SO GOOD! I didn't have salsa. Used a can of diced tomatoes instead (less sodium anyway!). Since I halved the recipe I used half a packet of taco seasoning. I added, upon another user's recommendation, a pack of frozen corn and a can of black beans. I also added the cilantro towards the end, and when I did that, I added a bit of crushed garlic also because I just love garlic. THIS WAS SO GOOD. We ate the filling with flour tortillas and had tacos. There is enough broth in the leftovers that you could eat it as soup if you wanted. I love that this recipe is essentially super healthy if you watch the sodium, and is adaptable. We will be making this time and time again!

Meatballs and Sauce

Great EASY recipe! I halved it, roughly, and because I read other reviews before cooking, I decided to use some white wine in place of the water. I don't recall making any other changes though and it was very delicious! I am excited to make this again and start adding to the recipe to make it more our own!

Quick Cheesy Corn

I love that I found a new & interesting way to prepare what could otherwise be a boring side dish: CORN. I used 10oz frozen corn because I don't do canned veggies. (Nutritional content is slightly better with frozen veggies!) And we only drink almond milk in this household, so since I wasn't sure how our Vanilla Almond Milk would taste in this recipe, I put a splosh of almond milk in, and also generous dollop of sour cream. I think the sour cream really helped make the dish tasty and substituted well for the cow's milk. Normally not a fan of bacon bits but we happened to have some in the pantry, so I am really glad to have a recipe to use them in!

Candied Sweet Potatoes

I don't cook with sweet potatoes often, so I accidentally peeled them BEFORE boiling them - not sure if that makes a difference in taste, but I'm aware it probably took me a little extra time. I cut the recipe down to 1/3 the original (to serve 4 - there's only two of us to feed!) and it was the perfect amount with some leftovers. I followed everyone's advice and toned the butter down a little bit. I used a ceramic baking dish similar to a LeCreuset for the oven bit. This dish came out super delicious and sweet and yummy! Would make again and keep this recipe in the rotation (with the notes to go easy on the butter!)

Spicy-Sweet Glazed Salmon

What a wonderful, and quite easy way to make salmon! It comes out tasting much different than your usual lemon/butter/garlic salmon, but still equally delicious. I did not have soy sauce on hand, so I used balsamic vinegar in its place (the closest thing I had to soy sauce in color, haha) and the salmon still turned out delicious. I will be using this recipe again after I buy some soy sauce and probably rating it 5 stars again :)

Easy Oven Brown Rice

I never have the patience for stovetop rice. I found this recipe and was intrigued. Thought I would just give it one shot. Well, the rice turned out really great! It was slightly al dente but that all depends on how much water, time, and what particular brand of brown rice you use. It was still fluffy, made plenty, and my fiancee was stoked to have good, yummy rice with his meal. The only downside for me was that some areas of my pan the rice stuck on, so I had to soak the dish overnight to get it off. (I used a ceramic glazed pan & lid, kind of like the LeCreuset dishes). Will keep using this recipe until I perfect the art of cooking rice in the oven! Thanks!

Delicious Egg Salad for Sandwiches

This recipe is an absolutely great tasting, wonderful basic egg salad recipe. I haven't read any of the other reviews but I followed it to a T and it came out awesome. I have made this a handful of times before, and just now came in to rate it. I will keep this recipe around for any time I need to make egg salad!

Easy Meatloaf

This is a wonderful basic meatloaf recipe that you can tweak and edit and add to as you like to suit your preferences. I made this with 1lb ground beef and 1lb spicy Italian sausage, and I loved the subtle kick the meatloaf had to it!

Tuna Fish Pea Salad

I made this a few months ago but forgot to leave a rating. Leaving it 5 stars due to the fact that this is SUPER easy to whip up, and could feed a crowd or potluck easily! And my, is it yummy! We ate it with crackers, but this is versatile! Thank you!

Chicken with Lemon-Caper Sauce

I give this 5 stars because it is delicious if followed to a T, but also has lots of wiggle room! First time I made this, I made it exactly as recipe stated. Second time, I realized I didn't have white wine and went the chicken broth route as some people suggested - it was good! I do prefer with wine though. The next time I make this, I will follow another suggestion to add spinach to get some yummy wilted spinach in there. That sounds good! You can decrease the amount of flour for sure, but for the people saying to decrease butter I don't really think it's necessary ;) Overall, this will be a keeper in my chicken dish rotation. LOVE this. For people who are not fond of tart flavors that come with lemon juice and capers, this may not be tasty. but I loved it.

Eggplant Pizzas

This was actually super delicious! I wanted to make a meatless meal for my family and this turned out great! I am not very familiar with eggplant, but now I like the stuff. Just make sure your oil is HOT enough before putting the eggplant slices in, my first couple of pieces were soaked in oil and it wasnt hot enough - my bad! On top of the mozzarella I placed minced red onion, sweet baby peppers and garlic. Yum yum! Mine only needed about 6-7 minutes in the oven, they were just so wonderful! Will definitely make again.

Sonora Chicken Pasta

I agree, to the people who "cant get over the Velveeta taste".. Well, this recipe is not for you! I found this recipe after looking for something to cook to use up my chunk of processed cheese food. (Not Velveeta brand, either.) I had to halve the recipe b/c I didn't have a pound of the stuff, in fact I didn't even have 1/2 pound but I improvised. I added a mexican spice blend to the cheese sauce (the fresh stuff you squeeze out of a tube) and it gave the sauce such an intense, good heat! I will definitely make this dish again if I come across Velveeta that I need to use up. I would even feed this to guests, it was delicious!!! Overall easy recipe to tweak or add to if need be, so don't worry if you don't have all the ingredients down to a T. I would suggest trying to make the sauce spicy or at least mild, it takes away from the processed cheese flavor that so many people don't love.

Lemon Pepper Chicken and Gravy

I basically followed this recipe to a T. I halved the chicken but kept the bell pepper amounts same. Only had one packet of gravy. 2 packets would've been nice but 1 is definitely enough! The end result was a very light tasting treat compared to what I usually tend to cook. I served this with rice. My S/O is a cheese lover and I was really happy to find a recipe that he thought was delicious ... WITHOUT CHEESE! :) I did end up using a little bit of corn starch to speed up the thickening process, but altogether this is a great recipe and I will make it again. It's pretty inexpensive to prepare also!!
