About this Cook
I'm a twentysomething native of Kitsap County in the beautiful, abundant state of Washington. I love the Pacific Northwest and all the culinary delights that it has to offer! Fresh crab or salmon, oysters and clams, mushrooms and much more! Along with cooking, I also enjoy snowboarding, scrapbooking and crafts, boot camp workouts, summertime, running, the outdoors, yoga, my church, personal finance, playing in the snow, and fun date nights with friends! When I'm at home, I like to plan ahead our meals and try out new recipes to expand my knowledge in the kitchen!
My favorite things to cook
I love cooking Mexican - it's so easy, however it's usually not 'diet' food! Anything with veggies, chicken, beef, or shrimp, as those are my usual staples! I love Italian but I find that it's easy to fall into an Italian rut and end up eating it solely for a whole week. I would rather have more variety! And I love cooking with ingredients I've never worked with before or that I don't see around very often. Sometimes I go in on a half cow with friends and I love cooking using the random cuts of meat I got from the deal!!
My favorite family cooking traditions
Every year about a week before Christmas, some ladies in my family[me, aunt, 4 other cousins] participate in Cookie Day. We sleep over at our aunt's the night before, and when we wake up, we get to bakin'! While we have holiday music blasting, we gossip and laugh and make holiday cookies of all sorts, and we don't stop until after sunset! The dining room and sometimes living room tables become covered in assortments of cookies cooling off, before we assemble them on to holiday platters to gift or bring home to our families. Each of us has "our" recipes that we make year after year without change. I love trying new and attractive recipes, and even tried assorted bars one year. Decided not to do it again because it got too messy and time-consuming to cut and plate them on the platters! This is a tradition that I wouldn't trade for the world, and we all look forward to it each year. New holiday cookie recipes are welcome, send them my way because I tend to be the one who experiments!
My cooking triumphs
Almost every time that I cook is a triumph, because it means I am continually learning. Especially when I make something I've never tried before that comes out successfully! Usually my triumps become part of the regular rotation :)
My cooking tragedies
I remember trying out a beer-battered fish recipe from this site with a boyfriend back when we were on a bar food kick... Well, we didn't own a deep fryer so we attempted frying the battered fish over an electric stove in a large pot just filled with oil! We had no idea how to test the oil for its readiness at the time [toothpick, duhh!], so the fish burned up so badly.. It was inedible and my apartment smelled bad the whole evening! I never did rate that recipe because I'd love to give it another shot once I own a deep fryer! And I once made a delicious-sounding pumpkin manicotti (also from this site) but I substituted too many ingredients and it came out pretty odd. I would be willing to try it again though, with fresh pumpkin and sticking to the recipe!

Linguine Pasta with Shrimp and Tomatoes
Made this with a few additions which truthfully probably make this recipe a lot different than the original, but this recipe is still really great! I added red pepper flakes, more garlic, and used canned tomatoes since that is what I had on hand. One reviewer described how they dressed their dish up with heavy cream and some capers... Well I had a little of both so I added that as well! The cajun seasoning and the red pepper flakes made a delicious heat, but we like heat so season according to your tastes! I will totally be making this again. Leftovers were gone the very next day (usually our leftovers hang out for a little while first!)

Lemon Garlic Tilapia
Very delicious recipe and a great "Base" recipe. You can switch it up a bit and it will likely still be delicious. I stuck lemon juice, butter, garlic cloves, fresh dill and a pinch of cayenne pepper and sea salt in a little blender. I spread this mix on my fillets and followed the cooking instructions (375 for about 25min).. They were mighty tasty. Thank you for providing a starter recipe that one can expand on! Yum!

Tender Italian Baked Chicken
Great basic breaded chicken recipe! I added some more spices & cut my thicker chicken breasts into halves so that they would be thinner and cook crispier - like some reviewers suggested. Easy to execute, and quite tasty! Chicken was so moist when it was done, and fiancee enjoyed his meal very much. Served with green beans and mac & cheese!
