This was absolutely delicious! I used crushed tortilla chips instead of flour tortillas and added 1 cup salsa to the meat mixture. Also subbed pkgs of taco and chili seasonings for the spices. Served with sour cream....yummm!

Fruit Cocktail Bars

I made this for a church potluck. Everyone thought it was good, however, it didn't set and had to be eaten with a spoon like pudding. I wasn't able to cut it into bars.

Chili Relleno Casserole

This casserole was amazing!!! I already bought the ingredients to make it again. I did cut the cheese in 1/2 though, and it was very cheesy and delicious!

Chile Rice Casserole

I made this for my 3 teenage boys. They really liked it. I thought it was ok, but a little bland. Might be better with some added garlic & other seasonings. Will make again for the kiddos.

BBQ Sauerkraut Casserole

This was really easy to make. I thought it was pretty good, but my 3 teenage boys loved it and have asked me to make it again. Served it with homemade smashed potatoes. Filling meal, reminded me of meatloaf.
