About this Cook
I am a mom to three kids and I haven't always loved to cook, but over the years I have come to really enjoy it. I am a teacher to a wonderful third grade class during the school year, and I'm very lucky I get to stay home with my children during the summer months.
My favorite things to cook
I love to meal plan dinners a month in advance, so I love to make all kinds of dinners. Mexican, quick dinners, soups, cookies, and fun desserts are at the top of my list. I am also in the process of trying to perfect my homemade pizza. Getting really close!!!
My favorite family cooking traditions
I love to cook big dinners, and I like monthly favorites. Like, my mother in law makes pear fritters every fall. We really look forward to those. My family loves pizza dinner night, the ribs my husband makes, making holiday cookies, cakes for fun occasions, etc.. We all like to eat at my house!
My cooking triumphs
I think just ever getting to be a "good" cook has been a process! My mom bought me a cookbook that had the basic of the basic... Think, this is a measuring cup, this is what baking powder does, etc... and I learned a lot from that. I love to cook a good dinner that my family loves! Pizza, indian tacos, pork chops, and I've heard I make a darn good spaghetti sauce :)
My cooking tragedies
My worst is always cakes. I need to get better pans is always my excuse. I am a lousy cake maker and I haven't always been. My cakes used to be alright, but in the last year or so, none have turned out!

Oatmeal Craisin Cookies
These were really good cookies! I did a couple things different: Instead of raisins, I used only Craisins and a little more than a cup. I also added a package of white chocolate chips. Super good cookie!

Oven Fried Chicken II
This was a very good,easy recipe. I used 5 boneless, skinless chicken breasts. Just made them the same way, but used butter in the the bottom of the pan instead of oil. I did cook them a little longer on each side, about 35 -40 minutes per side. They came out crispy and flavorful. This was a great recipe for sure, I served with homemade rolls, baked potato, and corn and my family really enjoyed. Thanks for the great recipe!

Slow Cooker Beef Stew IV
I really love this stew recipe. I leave out the onion soup mix and instead just use water or beef broth. I have used the red wine but sometimes I use Corona if I don't have any wine on hand and it works just great! Tastes great every time and so easy! Perfect for a fall or winter day! :)
