King Ranch Chicken Casserole III

Reviewed: Sep. 4, 2001
Very tasty. I have been raving over how good this recipe is for years and I had lost my copy of it so I hadn't made it in 5 years. I found this one and prepared it and my oh-so picky husband loved it. I recommend this to everyone!!

Beef Stroganoff III

Reviewed: Oct. 3, 2001
This recipe was fabulous! My husband is a beef stroganoff fan and having never made it, I wanted to find a good recipe. This one was wonderful! He raved about it and we have had it twice now. It does take a while to prepare but it is definitely worth it. I increased the wine and decreased the sour cream and everything still turned out great. Thanks for posting it!

Chicken and Dumplings I

Reviewed: Oct. 9, 2001
I was really disappointed with this recipe. The dough mixture wasn't the right consistency to roll out and cut so we ended up with dropped dumplings when we had really wanted the rolled. Also, the broth was very thin with very little flavor. I actually added thyme and rosemary to the broth and it made it more flavorful. If I make it again, I will definitely add a thickening agent to the broth, throw in a few veggies and tweak the dumpling recipe to get a rolling consistency.

City Chicken

Reviewed: Nov. 10, 2001
We loved this recipe! Both my husband and I were rather nonplussed by the smells coming from the combination of the chicken broth and the pork but it was absolutely delicious! The meat was extremely tender. I added some fresh ground garlic, some white pepper and some cumin and it tasted wonderful. It was even better the next day for lunch!

Roast Loin of Pork

Reviewed: Nov. 10, 2001
This recipe was OK. I allowed it to marinate for two days and while it was very tender, I didn't find it as flavorable as we had hoped. Most likely will not use again.

Easy Meatloaf

Reviewed: Nov. 10, 2001
My husband who doesn't even like the thought of meatloaf actually liked this one. I reduced the brown sugar to 1/3 cup because we don't like sweet food and it was still a little sweet for us but the glaze did do a wonderful job of keeping the meatloaf moist. I also increased the mustard and think that definitely added a little kick. Overall, a good recipe and made really great cold meatloaf sandwiches for lunch!

Chicken and Dumplings I

Reviewed: Jan. 2, 2002
I tried this recipe because of the dumpling mixture and was terribly disappointed. The eggs made the dough too hard once the dumplings had cooked and my husband wouldn't even eat them. I added some celery, carrots and green beans to the broth to make it thicker and the broth and chicken was great. Probably won't use again. Sorry.

Slow Cooker Chicken Parisienne

Reviewed: Jan. 3, 2002
This was outstanding! Both my husband and I just loved it! It was extremely easy to make and I even used frozen chicken breasts. I reduced the sour cream to a 1/4 cup because we are not big fans of sour cream but even the 1/4 cup gave it an incredibly rich flavor. I also used about 3/4 tsp. paprika which gave it a nice kick (we like spicy food). We will definitely be making this one again and I will be passing this recipe on! Thanks for a wonderful dish! 5 Stars!!

Slow Cooker Chicken Creole

Reviewed: Jan. 11, 2002
I liked this recipe. The chicken was very moist and tender and the seasonings were OK but a little on the light side (but we like lots of spice!) My husband didn't much care for it but he has an aversion to tomatoes. I will probably make this again but would kick up the spice a bit. Good recipe!

Chicken Enchilada Soup III

Reviewed: Mar. 15, 2002
This is an awesome recipe! Very close to Chile's Chicken Enchilada soup which is a favorite in our house. To save time, I just throw the shredded chicken in with all the rest of the ingredients, bring it to a boil and then turn it down and let it cook. We also cut up corn tortillas into very thin strips and bake them in the oven at 300 for 8 minutes. Then we sprinkle grated cheese and the chips on top. Very yummy! We have made it tons of times!

Bella's Rosemary Red Potatoes

Reviewed: Mar. 15, 2002
This was a great recipe! It tasted good, was easy to make and looked great! My husband doesn't like rosemary so I substituted fresh basil - they tasted wonderful! I also boiled them until just barely tender and then fried them on the stove. Much quicker and they tasted great! Try 'em! You'll love 'em!

Creamy Dill Cucumber Toasties

Reviewed: Mar. 25, 2002
This recipe was wonderful! I made these for a bridal shower and everyone loved them! No one believed me when I told them what the ingredients were because this recipe was so EASY!!! I used fresh dill instead of the dried and mixed 1 tbsp. in with the cream cheese mixture in addition to the dill I sprinkled on top. I got tons of requests for this recipe and the bride has requested it to put in her Newlywed recipe file. Thanks for such an awesome recipe, Dianne!

Artichoke & Spinach Dip Restaurant Style

Reviewed: Mar. 25, 2002
Updated 1/27/11: I still make this all the time, but I've made it even easier because I don't bake it anymore. I just mix all the ingredients in a casserole dish and microwave it until it's hot. Everything melts together quickly and it tastes just like it's been in the oven, but takes a fraction of the time. Original Review 3/19/02: This dip was incredible and was so unbelievably easy! I made this for a bridal shower and everyone wanted the recipe. The bride's aunt wanted to take the leftovers home with her but I was selfish and kept them for myself.:) I used fresh spinach that I steamed and finely chopped. I just layered everything in the pan the night before, covered in plastic wrap and stored in the fridge until I needed to cook it. I popped it in the oven and added about 15 minutes to the cook time (because it was cold) and it came out perfectly! We served it in a hollowed out bread bowl and it was great! The only change I will make in the future is to add more garlic (but we like garlic in my family). I will be making more of this for myself! Thanks for the great recipe, Terra!

Ham and Fresh Basil Pinwheels

Reviewed: Mar. 25, 2002
This were pretty good but my finished product didn't really resemble the original recipe at all. I used deli-sliced turkey, cheddar cheese and dried basil. I spread the tortillas with the cream cheese and sprinkled about 1/8 tsp. of dried basil over the tortilla, layered the turkey, then cheese, then lettuce and topped with the sun-dried tomatoes. I thought the tomatoes added some nice flavor. We made these the night before for a bridal shower, covered and sliced them right before the party. They looked good, kept their shape well and got better with time. I had one left that I took for lunch 2 days later and it was still great! This recipe works well with some tweaking.

Best Bruschetta Ever

Reviewed: Mar. 25, 2002
I'm not a huge tomato fan but I do like bruschetta and this was good! We made this for a bridal shower and it was very well received. We doubled the recipe, added some extra garlic and let it sit for about 16 hours. The flavors melded nicely and tasted great served over toasted baguette slices. This was a big hit with our tomato lovers! I'll definitely be making this one again!

Fried Ice Cream

Reviewed: Jun. 9, 2002
This is a great recipe! I have had fried ice cream several times at a tex-mex restaurant and have been looking for a recipe that is like theirs'. I've found it! I recommend rolling the ice cream balls in the crushed flakes twice. I also find it easier to form the balls the evening before and freeze them overnight before you roll them in coating. My husband has never had fried ice cream and loved this!! 5 Stars!

Sauce Rosee

Reviewed: Aug. 24, 2002
I did not care for this recipe. I followed the recipe exactly. While it is possible that my husband and I don't like sweet food and that is why we intensely disliked this, I think it has more to do with the fact that it was just not good!

Cajun Dirty Rice

Reviewed: Aug. 24, 2002
I would say this recipe was not bad but definitely only average. I used chicken and andouille sausage and added cajun seasoning because the original recipe was not spicy enough. Definitely try it if you are looking for a nice, simple dirty rice but if you're looking for the real thing, make it from scratch!

Mushion Pork

Reviewed: Aug. 24, 2002
This recipe was great! Very easy to make and the chops were incredible juicy and tender! I pre-seasoned mine with some minced garlic, fresh ground pepper, salt and thyme rubbed in to both sides but the mushroom soup definitely made it very tender. We will definitely be making these again when we need a quick loin chop recipe.

Buitoni's Garden Pasta Salad

Reviewed: May 21, 2003
I really enjoyed this salad. I tossed it together for a quick afternoon lunch with friends and it was well received. The different flavors complemented each other well and I loved that it was so quick and easy to put together.
