Pumpkin Chocolate Chip Cookies III

These were pretty good, but a little more cake-like than I was expecting. Like others, I made them a little healthier by using 1/2 oil and 1/2 applesauce, as well as 1/2 white and 1/2 whole wheat flour, and fewer chips. The flavor was good, not too sweet.

Good Old Fashioned Pancakes

I know how tempting it can be to alter a recipe after reading the reviews; I do it all the time! But with these, I would suggest following the recipe. They were PERFECT as is.

Blackberry Peach Pie

I had friends over for dinner, and everyone loved this. I used frozen thawed blackberries and canned peaches, and it still turned out great.

Butternut Squash Soup

YUM! My husband and mother-in-law don't even like squash, but they both thought this was really good, too. I cut the fat a little bit by using 2 Tbs. of butter instead of 4, and using 1 package of low-fat cream cheese, rather than 2. SO good.

Iced Pumpkin Cookies

These are really good. I followed the recipe exactly, with one exception: I didn't realize that I was out of eggs, so I substituted 2 Tablespoons of cornstarch (added in with the wet ingredients). I don't know how much this affected the taste of the original recipe, but we thought they were great!

The Best Rolled Sugar Cookies

I've been making these for years, except I replace half the butter with shortening. They always turn out wonderfully. They're not terribly sweet, but the frosting sweetens them up a lot.
