Spanish Chicken and Rice

This was absolutely delicious! I'm a poor college student, so I used only 1 (boneless) chicken breast, and cut it in half for one serving. I kept the same amount of rice and spices, and it seemed to be the right proportions. I also omitted the pimentos, and didn't feel like I was missing anything. When using only one chicken breast make sure to reduce the cook time to about 30 minutes, otherwise it gets a little dry. Will definitely be making this again!!

Basil-Garlic Grilled Pork Chops

We had company over and served these - they were a big hit. The lime juice soaked in enough to make the meat tender, not sour. Definitely a keeper!

Easy Bake Fish

Really delicious! I want to try wrapping the fish in foil next time so see if that cuts down on the cooking time. I followed the recipe exactly, except that I used 4 tilapia fillets. The recipe as stated made a little extra sauce. Served with garlic mashed potatoes and broccoli! I definitely will make this again.

Suzy's Mashed Red Potatoes

These were fabulous! I used fat-free sour cream and they still turned out wonderful. As a tip, make sure that the butter is at room temperature otherwise it's harder to mix everything together. Will definitely be making these again.

Cornish Game Hens with Garlic and Rosemary

This was fantastic! I made it for my parents on Christmas Day and they loved it. I doubled up on the sauce, but it didn't thicken quite as much as I would have liked even after I added cornstarch. Next time I will boil it for longer. I served this with Suzy's Mashed Red Potatoes and reduced fat (Giant Eagle brand) crescent rolls. Will definitely make again!

Zucchini Pasta Bake

SO GOOD! I used whole wheat spaghetti noodles (it's all I had) and I halved it because it's only for me BUT I put in the full amount of seasoning - a very good decision. I used a 14.5oz can of diced tomatoes since I didn't have a large tomato on hand, and this helped to keep it from getting too dry. I added a can of mushrooms and left out the salt and pepper (mainly because I forgot). So filling and healthy! I will definitely make this again!

Zucchini Parmesan

I love love love zucchini, so I've been trying many recipes on this site. This was good - I cut the ingredients in half and used minced garlic from a jar. There was a little too much sauce, though - definitely needs to be served over pasta or with some garlic bread. Other than that a great recipe!

Cheesy Pizza Dip

I would definitely recommend following the directions. I layered the ingredients (because we made this last minute at my boyfriend's for the OSU/Michigan game) and I think it would be better blended. ABSOLUTELY DELICIOUS either way.

Avocado Salad

I really enjoyed this salad as a change of pace. I subbed grape tomatoes for the chopped and omitted the pepper because I didn't have one on hand. It was delicious, filling, and healthy (although watch the avocado, which is high in fat). I will definitely make this again!

Salmon with Tomatoes

I really enjoyed this dish, though I cut down on the parsley significantly. It's a great take on salmon. I subbed 1 16 oz. can of diced tomatoes for fresh and it still turned out great. I think next time I will try adding mushrooms.

Simple Garlic and Basil Pesto

I think I'll cut back on the oil a tad next time - perhaps I just didn't blend it long enough. I also omitted the chili powder since I was looking for a really basic basil recipe. I think next time I will try adding nutmeg. My parents were really impressed with this recipe! I tossed some elbow macaroni noodles in the pesto, added some quartered cherry tomatoes and feta (my favorite pasta dish) and froze the rest for later. Thanks for sharing! UPDATE: will definitely cut back on the oil, as the pesto did not freeze all the way when i put it in the ice cube trays as one reviewer recommended

Julian's Festive Tuna Salad

I liked this much better than the traditional tuna salad - I liked the addition of cumin especially. I left out the black beans (college student budget!) and the optional ingredients and it was still delicious. I also added a few shakes of chili powder because I felt like there was something missing. Will definitely make again!

Braised Pork Chops

This was delicious! I was looking for a way to cook pork chops without breading, and this was a winner. We used 7 thin-sliced boneless chops, cooked per the directions, then braised them in the crock pot with double the water and about a 1/2 cup of Riesling. Per another reviewer I added rosemary, and doubled the amount of spices. The gravy didn't turn out too great, but this was also my first time making gravy so maybe next time will be better. Thanks Shirley for the recipe!

Slow Cooker Cheese Steaks

My boyfriend loved this! Be sure to ask your butcher if tri tip steak is available - it wasn't at our store, and the butcher was able to suggest a different cut. We left out the mushrooms (he's not a fan of them), but I will definitely add them to mine next time!

Tuna Noodle Casserole I

as written, not the greatest. following the lead of other reviewers i doubled the sauce and doctored it up with garlic powder, paprika, chili powder, and red pepper flakes. I also omitted the salt. as to veggies, I added some grape tomatoes I had leftover as well as some canned green beans. I doubled the amount of tuna. Topped it all off with breadcrumbs. AMAZING.

Very enjoyable! I followed the recipe excepting the orange (I forgot to get it), and I think that would have helped. Next time I will probably add orange juice or lemonade for some additional acidity.

Whit's Chicken Enchiladas

I followed the suggestions of several other reviewers and have concluded that I must have put too much enchilada sauce on the bottom, because mine turned out nice and crispy on top but a little soggy on the bottom. The filling, however, was DELICIOUS. I used six chicken breasts (I was entertaining) and added taco seasoning while boiling them. I also added red and green bell peppers and onions to the filling. It was a hit, will definitely make again.
