Miracle Soup

I'm trying to lose weight for spring break and this has definitely helped. I cut down on the ginger the second time I made it, but I will definitely use the full 1/4 cup the next time I make it. I added water chestnuts for extra crunch and subbed in sliced baby corn and broccoli for the mixed vegetables. Even my roommates liked this soup!

Slow-Cooked White Chili

This was ok - I just felt like there were several tastes missing from it. I added a hearty amout of chili power, but that didn't really help. The green chiles were a great idea, but it ended up not being as hearty as other chilis I've made in the past. If I make it again I will try adding brown sugar and possibly some more vegetables.

Roasted Red Pepper Yogurt Dip

This came out really soupy. Next time I might use less yogurt - I couldn't find 8oz containers so I just measured it out from a bigger container. I added chili powder - this kept it from being overly bland - and I used lots of garlic powder instead of a clove.

Tuna Noodle Casserole I

as written, not the greatest. following the lead of other reviewers i doubled the sauce and doctored it up with garlic powder, paprika, chili powder, and red pepper flakes. I also omitted the salt. as to veggies, I added some grape tomatoes I had leftover as well as some canned green beans. I doubled the amount of tuna. Topped it all off with breadcrumbs. AMAZING.

Easy Bake Fish

Really delicious! I want to try wrapping the fish in foil next time so see if that cuts down on the cooking time. I followed the recipe exactly, except that I used 4 tilapia fillets. The recipe as stated made a little extra sauce. Served with garlic mashed potatoes and broccoli! I definitely will make this again.

Zucchini Pasta Bake

SO GOOD! I used whole wheat spaghetti noodles (it's all I had) and I halved it because it's only for me BUT I put in the full amount of seasoning - a very good decision. I used a 14.5oz can of diced tomatoes since I didn't have a large tomato on hand, and this helped to keep it from getting too dry. I added a can of mushrooms and left out the salt and pepper (mainly because I forgot). So filling and healthy! I will definitely make this again!

Zucchini Parmesan

I love love love zucchini, so I've been trying many recipes on this site. This was good - I cut the ingredients in half and used minced garlic from a jar. There was a little too much sauce, though - definitely needs to be served over pasta or with some garlic bread. Other than that a great recipe!

Julian's Festive Tuna Salad

I liked this much better than the traditional tuna salad - I liked the addition of cumin especially. I left out the black beans (college student budget!) and the optional ingredients and it was still delicious. I also added a few shakes of chili powder because I felt like there was something missing. Will definitely make again!

Salmon with Tomatoes

I really enjoyed this dish, though I cut down on the parsley significantly. It's a great take on salmon. I subbed 1 16 oz. can of diced tomatoes for fresh and it still turned out great. I think next time I will try adding mushrooms.

Spanish Chicken and Rice

This was absolutely delicious! I'm a poor college student, so I used only 1 (boneless) chicken breast, and cut it in half for one serving. I kept the same amount of rice and spices, and it seemed to be the right proportions. I also omitted the pimentos, and didn't feel like I was missing anything. When using only one chicken breast make sure to reduce the cook time to about 30 minutes, otherwise it gets a little dry. Will definitely be making this again!!

Salmon with Lemon and Dill

Definitely too much dill, but still delicious. I used the extra sauce to cook some rice and veggies. I think next time I will bake it with the rice and veggies in a covered dish for the same amount of time.

Cheesy Pizza Dip

I would definitely recommend following the directions. I layered the ingredients (because we made this last minute at my boyfriend's for the OSU/Michigan game) and I think it would be better blended. ABSOLUTELY DELICIOUS either way.

Pork Tenderloin with Dijon Marsala Sauce

I followed the suggestions of the other reviewers and did not marinate the pork in mustard before baking them, which I think turned out well. I will decrease the cooking time the next time I make this, as the pork was a little overdone for my tastes. The sauce was delicious! I served this dish with mashed potatoes, rolls and broccoli - amazing. Great valentines day dinner! thanks koalagirl!

Simple Garlic and Basil Pesto

I think I'll cut back on the oil a tad next time - perhaps I just didn't blend it long enough. I also omitted the chili powder since I was looking for a really basic basil recipe. I think next time I will try adding nutmeg. My parents were really impressed with this recipe! I tossed some elbow macaroni noodles in the pesto, added some quartered cherry tomatoes and feta (my favorite pasta dish) and froze the rest for later. Thanks for sharing! UPDATE: will definitely cut back on the oil, as the pesto did not freeze all the way when i put it in the ice cube trays as one reviewer recommended

Spicy Garlic Lime Chicken

I followed the comments of another reviewer and added 1/3 cup of chicken broth to the sauce. It balanced out the lime nicely, so there are definite notes of lime and garlic but they aren't overpowering. I only added 2 Tbsp of lime juice, and omitted the onion powder since I was out. My parents went crazy for it! I added some rice to the final product, and will be cutting up the smallest pieces of chicken to add to my salads :) Side note: definitely use chicken breasts for this recipe. I used thighs, because that's what I had, and I had to cook them an additional half hour in the oven. A thinner cut of chicken should cook all the way on the skillet.

Cornish Game Hens with Garlic and Rosemary

This was fantastic! I made it for my parents on Christmas Day and they loved it. I doubled up on the sauce, but it didn't thicken quite as much as I would have liked even after I added cornstarch. Next time I will boil it for longer. I served this with Suzy's Mashed Red Potatoes and reduced fat (Giant Eagle brand) crescent rolls. Will definitely make again!

These were fabulous! I used fat-free sour cream and they still turned out wonderful. As a tip, make sure that the butter is at room temperature otherwise it's harder to mix everything together. Will definitely be making these again.

Slow Cooker Cheese Steaks

My boyfriend loved this! Be sure to ask your butcher if tri tip steak is available - it wasn't at our store, and the butcher was able to suggest a different cut. We left out the mushrooms (he's not a fan of them), but I will definitely add them to mine next time!
