Easy Butternut Squash Ravioli

The filling is absolutely delicious. I'm hesitant to use wonton wrappers due to the consistency ratings I've read so instead I made gluten free raviolis. This was fantastic. I'd definitely make again!

Braised Balsamic Chicken

This has become a regular in my house. I do cook the chicken longer because unless pounded down, the breasts need more cooking time. Otherwise, I wouldn't change a thing. Just one recommendation - use a really good balsamic vinegar. This is a keeper!

New England Clam Chowder II

Delicious! More flour needed if you like it thicker. We make our own steamed clams with all the fixins and use the broth from that cook as the base. I also added extra clams, celery and chopped up the leftover chourico and linguica from the cook and added it right in. Hubby said it was good enough to enter into a contest. Thanks for the great recipe!

Colleen's Slow Cooker Jambalaya

Fantastic! My Dad loves spicey and for him to tell me to let him know when I make it again tells you it's good! I did substitute the sausage for hot turkey sausage to cut down on the fat. I also doubled the recipe but instead of full cans of diced tomatoes, I used one 28oz can of crushed tomatoes and drained a 12 oz can of diced tomatoes and added them in. We served it over brown rice. I will DEFINITELY be making this a staple in my house.

Sweet Potato Pie II

Very tasty - great warm! I did have to cook it longer as the middle seemed to stay very soft. It is a sweet dish since cooked sweet potatoes are naturally sweet so I would maybe cut down the white sugar a tad next time. Otherwise, I wouldn't make any changes. Delicious!

Marinated Tuna Steak

Delicious. I marinated it overnight and was always skeptical about eating fish rare but knowing that's how you are suppose to cook tuna, I bit the bullet. So glad I did. I will definitely make this again!

Vegetarian Korma

I doubled the recipe but because I only had one jalapeno, I added a bit of cayenne for more spice. I did use the tomato sauce and took the recommendation of using coconut milk. The potatoes were still a bit firm but they did finish cooking in the coconut milk. I also added a touch of cumin. It's a cross between indian and thai curry but it's delicious! Will definitely make it again. Next time, will use less potatoes and serve over brown rice. Delish!

Baked Stuffed Shrimp

Very good recipe, though I did alter it a bit. I used low fat Ritz crackers (better flavor than soda crackers),lite butter, and did not add bread crumbs but instead added two cans of drained crab meat. I also added some Old Bay seasoning for additional flavor. I doubled the recipe and only 5 were left. Fantastic!

Pork Tenderloin with Dijon Marsala Sauce

I tried this recipe for Christmas dinner and there wasn't a piece of meat left. I used fat free half and half and small red pearl onions since I did not have shallots. I also rubbed the the tenderloin with the dijon mustard and cooked it in a rotisseiri. Fantastic. Would definitely make again.

Oven Baked Jambalaya

If you like spicy, you'll love the flavor. I added hot sausage as well. Very tasty! Leave plenty of time for prep work and cooking. Rice didn't cook well, even after two hours. Next time, I will try to pre-cook rice using some of the broth from the bake and adding it to the bake in the end. Highly recommend this recipe.

Blueberry Sour Cream Coffee Cake

I followed some other recommendations and cut the white sugar in half and added a lot more fresh blueberries than the recipe called for. I also didn't have sour cream so used a substitute of blended cottage cheese and lemon. This was a HUGE hit in my house. I doubled the recipe and one cake is already gone and I only made it this morning. Will definitely make this again.

Quickie French Onion Soup

Yum. I added an additional onion and followed other's suggestions and added 1 tsp of worcestershire sauce and 2 tbsp of sherry cooking wine. Fanastic! My kids love onion soup and I haven't found a recipe I've truly enjoyed, until now. Thanks for sharing!

Black Bean and Salsa Soup

I am always looking for new recipes because one of my daughters doesn't eat most meats. This was super easy, and delicious. I used chicken broth because I didn't have vegetable broth but that was the only change I made. My daughter's comment is that I now need to make this once per week. I will defintely make it again!

Pumpkin Bread

Absolutely delicious. The changes I made are I used half white sugar and half brown sugar. Also, instead of oil, I used 1/2 cup vanilla yogurt and 1/2 cup applesauce, and threw in dried cranberries. VERY moist and perfect right out of the oven. I will definitely make again. Thanks for sharing.

Pork and Vinegar

Just a hint for folks trying this for the first time - please make sure you enjoy the flavor of vinegar as it does alter the flavor of the food. However, if you are unsure, you can always use less than the recipe calls for for the first time. One reviewer used cabbage - thanks for the idea. I may just try it myself!
