Slow Cooker Vegetarian Minestrone

I've made this recipe twice already and it's quickly becoming a favorite to my girls that don't eat meat. I haven't found a need to change anything as it's great just the way it is. Thanks for sharing!

Macaroni and Cheese Bake

Very tasty. Instead of milk, I added Fat Free Half and Half - creamier and thicker than milk. I also used shredded vs. sliced cheddar so that I could top the bake with it to make it golden brown (and add a little extra inside for a cheesier flavor). I also topped with sprinkled bread crumbs and paprika.

Kale Krisps

Very good use of the kale as it takes out some of the natural bitterness kale has. One tip - rather than shred the kale, roll a few leaves like you would basil and chop thin. Quick and easy. I will definitely make it again.

Jack-O-Lantern Pumpkin Pancakes

These became my teenagers new favorite pancake. I took the advice of others and let the batter sit a bit to soften th oatmeal. Otherwise, I didn't change a thing. Delicious!

Apricot Chicken

Very good! Very quick and easy dish to make. I added peanuts vs. cashews as that's all I had on hand. For leftovers, I served over pasta and it was just as good. Thanks for sharing.

Pumpkin Bread

Absolutely delicious. The changes I made are I used half white sugar and half brown sugar. Also, instead of oil, I used 1/2 cup vanilla yogurt and 1/2 cup applesauce, and threw in dried cranberries. VERY moist and perfect right out of the oven. I will definitely make again. Thanks for sharing.

Baked Stuffed Shrimp

Very good recipe, though I did alter it a bit. I used low fat Ritz crackers (better flavor than soda crackers),lite butter, and did not add bread crumbs but instead added two cans of drained crab meat. I also added some Old Bay seasoning for additional flavor. I doubled the recipe and only 5 were left. Fantastic!

New England Clam Chowder II

Delicious! More flour needed if you like it thicker. We make our own steamed clams with all the fixins and use the broth from that cook as the base. I also added extra clams, celery and chopped up the leftover chourico and linguica from the cook and added it right in. Hubby said it was good enough to enter into a contest. Thanks for the great recipe!

Sweet Potato Pie II

Very tasty - great warm! I did have to cook it longer as the middle seemed to stay very soft. It is a sweet dish since cooked sweet potatoes are naturally sweet so I would maybe cut down the white sugar a tad next time. Otherwise, I wouldn't make any changes. Delicious!

Chicken Milano

I enjoyed this recipe. To cut down on fat and calories, I used a fat free half and half vs. heavy cream. I did use a small amount of cornstarch mixture to add a little thickening to it. I also used a non stick spray when cooking the chicken vs. using oil. This also cut back on fat and calories. The cicken did take longer than 4 min. per side. Delicious!

Black Bean and Salsa Soup

I am always looking for new recipes because one of my daughters doesn't eat most meats. This was super easy, and delicious. I used chicken broth because I didn't have vegetable broth but that was the only change I made. My daughter's comment is that I now need to make this once per week. I will defintely make it again!

Banana Banana Bread

I did a 4 star only because I felt the recipe, which is good!, needed a little something. I referred to other viewers and added a tsp of vanilla and a tsp of cinnamon. Then, added some chocolate chips.Helpful hint: I always mash and free old bananas - 3 to a bag which one bag is good per batch. Once thawed, it creates enough juice to moisten the batter. Will definitely make this again. Thanks!

Colleen's Slow Cooker Jambalaya

Fantastic! My Dad loves spicey and for him to tell me to let him know when I make it again tells you it's good! I did substitute the sausage for hot turkey sausage to cut down on the fat. I also doubled the recipe but instead of full cans of diced tomatoes, I used one 28oz can of crushed tomatoes and drained a 12 oz can of diced tomatoes and added them in. We served it over brown rice. I will DEFINITELY be making this a staple in my house.

Oven Baked Jambalaya

If you like spicy, you'll love the flavor. I added hot sausage as well. Very tasty! Leave plenty of time for prep work and cooking. Rice didn't cook well, even after two hours. Next time, I will try to pre-cook rice using some of the broth from the bake and adding it to the bake in the end. Highly recommend this recipe.

Blueberry Sour Cream Coffee Cake

I followed some other recommendations and cut the white sugar in half and added a lot more fresh blueberries than the recipe called for. I also didn't have sour cream so used a substitute of blended cottage cheese and lemon. This was a HUGE hit in my house. I doubled the recipe and one cake is already gone and I only made it this morning. Will definitely make this again.

Easy Butternut Squash Ravioli

The filling is absolutely delicious. I'm hesitant to use wonton wrappers due to the consistency ratings I've read so instead I made gluten free raviolis. This was fantastic. I'd definitely make again!
