Pumpkin Wheat Honey Muffins

Considering the healthier alternatives in this recipe (ww flour, honey to replace some of the sugar-and I used applesauce instead of oil) I think they turned out pretty good. Of course they certainly don't taste the same as some of the other pumpkin muffin recipes I've made recently that are full of fat and sugar. But I'm glad I made them and may use this recipe again in the future when wanting a healthier treat.

Puffs

These were delicious! Like many others, I varied the recipe to make it what I wanted. I omitted the onions and garlic, used pepperjack cheese instead of monterey jack and I used 4 fresh jalapenos (sauteed in butter first) rather than the jarred jalapenos. The favor was phenomenal! Cheesy and slightly spicy and the perfect amount of jalapeno flavor! I followed the recommendations of others and used a water/cornstarch mixture to seal the wrappers and I didn't have any issue with them bursting in the oil like others did. The only flaw in the recipe that I could find is that 1 tsp of filling seemed like way too LITTLE! The fried wrappers seemed rather empty! That's easy to remedy and I'll definitely be making these again and again!

Country Pound Cake

I wasn't impressed by this recipe. I followed it exactly but it definitely did not need to be baked as long as the recipe indicates! Mine was only in the oven for 55 mins (including the time it sat in the cold oven while preheating). The top had a strange texture and the sides got hard and sort of crystalized. I had to cut off the sides because they were inedible. That was ok though, because I was cutting the cake into pieces for dessert skewers anyway. The rest of the cake tasted very good!

Double Chocolate Mocha Trifle

The result was very tasty! I give this only four stars because I felt the directions needed modification. I followed many of the other reviewers suggestions (such as adding more pudding, more coffee, and more whipped topping) which helped fill my trifle bowl to the top. Many reviewers suggested using more milk to avoid having stiff/thick pudding(they said to follow the pie filling directions on the pudding box) and I did this but actually thought the pudding was not thick enough...my layers didn't quite set and pudding leaked into the other layers. I'm all about a nice presentation so I would have preferred the thick pudding. But that's just my opinion. I will definitely make this again!

Candy Cane Fudge

I changed two things...I added another 1/2 tsp. of peppermint extract and I used white chocolate chips because I've never heard of nor could I find vanilla chips! I personally don't like white chocolate so this wasn't a big hit for me, but others loved it!

Peanut Butter Cup Cookies

These were tasty and oh so sweet...but why wouldn't they be with the great combo of chocolate and peanut butter! It would have been nice to know what size balls to make to equal 40. I guessed and ended up with 32. I also followed others advice to freeze the candy and that worked nicely.

Dirt Cake I

I have had dirt cake many times and even made it a few times in the past, but I just didn't care for this recipe. The end result was tasty but I wouldn't use this recipe again. I found it impossible to blend the cream cheese mixture smoothly with the pudding mixture. I used my kitchenaid countertop mixer and beat on high for a long time and it still didn't come out quite smooth, but maybe I was just being picky. I also think the majority of the ingredients are unnecessary (powdered sugar, butter, cream cheese and even the cool whip). I honestly think it would have tasted better with just pudding and cookie crumbs. Lastly, two boxes of oreos would be way to much. I only used one. Oh...and don't forget to add gummy worms!!

Jamie's Minestrone

I made the recipe as is. It was delicious and full of flavor. I've been dissatisfied with Minestrone I've ordered at restaurants...this recipe definitely tops them all! My only complaint was that it was really chunky and full of vegetables and I would have preferred a little more broth. Other reviewers said it was more like "stoup" than soup. I would agree. Easy fix for next time I make it.

Peanut Butter Cupcakes

Very good cupcakes! Taste fine alone but I love frosting! This is my favorite recipe for peanut butter frosting: 1 c. powdered sugar, 3 T. softened butter, 1/2 c. peanut butter, and 2.5 T. milk or cream.

White Chip Chocolate Cookies

I made this recipe using the modifications from another reviewer. These cookies were good and went quickly, but they're not what I was looking for. My neighbor, who has now passed away, used to make the most wonderful chocolate chocolate chip cookies and I've been searching for a recipe that comes close. This one is good, but it isn't it.

Apple Pie

I feel a little bad giving this pie only three stars because overall, it's not bad. It turned out well and is full of flavor, but this pie is just not for me. I definitely did not like the ginger and I also thought the pie needed more apples and a little more flour to make it less runny.

Mini Cheesecakes III

I made these in a mini muffin pan so it made quite a few bite sized treats. I had a little trouble with the crust staying together...some problem with the graham cracker to butter ratio I think. I also forgot the egg (oops!) but they still turned out delicious! I made a sweet strawberry sauce to top them. I will definitely be making these again...watching the directions a little more carefully... to get the wonderful results everyone else got!!

Kielbasa with Pasta

I made this recipe as is, with the addition of some seasonings as suggested by others because I like my food spicy! I added a little of each: salt, pepper, garlic powder, italian seasoning, cayenne pepper, and red pepper flakes. Very good and will make again!

Banana Chocolate Chip Cookies

I thought these were good! I followed others' comments and used half the amount of baking powder and added more banana. 12 minutes was too long in my oven so the first batch had kinda dark bottoms. If you like banana and chocolate and you don't mind a cakey/muffin-like cookie, you will likes these!

Best Toffee Ever - Super Easy

Hard to know what rating to give this. I've never made toffee before and attempt number one went badly. I followed the directions exactly and was feeling good when it started turning amber colored and I hadn't had a separation problem. Unfortunately, my problem was that the mixture turned a dark dark almost chocolate color LONG before hitting 285 degrees. I kept the temperature at slightly lower than medium to avoid burning. No burning smell or anything so not sure why it's so dark. I also had trouble with the chocolate melting...it almost seemed crumbly and I had a hard time spreading it. I'll try again but not sure what to do differently next time. Can't say for sure if this is a recipe flaw or operator error! Ok just tried round two...this time I didn't use the thermometer and acheived the desired color; however, the butter separated right at the end and it became thick. I plopped the "dough" on the cookie sheet and it stayed as is! Another flop. Ugh!

No-Knead Artisan Style Bread

This bread didn't work out for me. It either didn't rise or I missed the rise. I baked it anyway...it turned out about 3 inches high and it tasted ok when it was fresh out of the oven...soft on the inside and crusty on the outside. But after it sat for a few hours it became soggy and dense. I'll try again....

New Orleans Corn Bisque with Smoked Sausage

Wow this was good! I made a couple changes...I made a blonde roux with flour and oil first and omitted the butter. I also used half of the milk and used 2 cups of chicken broth in its place. And most importantly...I added lots of cajun spice seasoning and cayenne pepper...it would be very bland without. I give this recipe a 5++ when you add the seasonings! Yum!

MMMMM... Brownies

These were very good and had all the qualities that make a good brownie GOOD...soft, fudgy, flaky on the top, and a little chewy on the edges. I followed the recipe exactly except I doubled it and put it in a glass 9x13 pan. I baked it for 35 minutes.
