Pumpkin Wheat Honey Muffins
Considering the healthier alternatives in this recipe (ww flour, honey to replace some of the sugar-and I used applesauce instead of oil) I think they turned out pretty good. Of course they certainly don't taste the same as some of the other pumpkin muffin recipes I've made recently that are full of fat and sugar. But I'm glad I made them and may use this recipe again in the future when wanting a healthier treat.

These were delicious! Like many others, I varied the recipe to make it what I wanted. I omitted the onions and garlic, used pepperjack cheese instead of monterey jack and I used 4 fresh jalapenos (sauteed in butter first) rather than the jarred jalapenos. The favor was phenomenal! Cheesy and slightly spicy and the perfect amount of jalapeno flavor! I followed the recommendations of others and used a water/cornstarch mixture to seal the wrappers and I didn't have any issue with them bursting in the oil like others did. The only flaw in the recipe that I could find is that 1 tsp of filling seemed like way too LITTLE! The fried wrappers seemed rather empty! That's easy to remedy and I'll definitely be making these again and again!

Country Pound Cake
I wasn't impressed by this recipe. I followed it exactly but it definitely did not need to be baked as long as the recipe indicates! Mine was only in the oven for 55 mins (including the time it sat in the cold oven while preheating). The top had a strange texture and the sides got hard and sort of crystalized. I had to cut off the sides because they were inedible. That was ok though, because I was cutting the cake into pieces for dessert skewers anyway. The rest of the cake tasted very good!
