Chocolate Chip Banana Bread II

4.5 stars for me :) It was delicious! Soft on the inside, moist and great texture, with a crisp outside. I did follow someone else's suggestion and used half brown, half white sugar, swapped the shortening for butter and about 1 tsp vanilla extract. My family absolutely LOVED it! The only minor problem I had, was that the outside got a little too browned. Nevertheless it was DELICIOUS. I will most definitely be making this again soon.

Big Soft Ginger Cookies

:) That's all I can say about this recipe. It's a must try! I couldn't believe how chewy and delicious they were. And it's the day after today and guess what? Still soft and chewy! I did not use orange juice, as I had none on hand, but really I don't see how the cookies could get any better! The recipe made about 3 1/2 dozen for me, and yes, rolling the cookies in sugar before manually rolling them really helps. My aunt and mother both ate (combined) about 10-13 cookies in one sitting! I will DEFINITELY be making these again soon.

Licuado de Mango

I'm not sure if it was the mango or the recipe but this was far from delicious. I could hardly taste the mango as it was drowned in milk. Next time I think I'll use less milk, a better mango and maybe a bit less honey (I could taste way too much of it).

Buttery Soft Pretzels

Ohhhh myyy Goooodddd... that's the first thing that popped into my head when I took my first bite of my freshly baked pretzel. These are AMAZING. It was my first time making 'from-scratch' homemade pretzels and I will definitely be making them again. The dough was deliciously soft and... there are no words to describe it. The only step that I switched around was that I waited until after they were baked to spread butter and sprinkle some salt onto them. Maybe next time I"ll try it the other way around. Either way, I'm sure they'll be absolute BLISS. Thank you so much for this. :)

Ho Ho Cake

I couldn't seem to get the cream filling to whip. I've had problems with this kind of frosting in the past, and I don't know what I'm doing wrong. Could someone pleeeeeeeease explain to me exactly HOW to get the filling nice and fluffy? _________________________________________________________ EDIT EDIT EDIT EDIT EDIT EDIT: alright, I see what I was doing wrong. In an attempt at making it trans-fat-free I tried using butter/margarine instead of CRISCO. Bad idea. The shortening is what makes it fluffy and stable. I suggest putting 1/4 cup less of margarine/butter and 1/4 cup for shortening. Clear vanilla preserves it's white, appealing color. Overall, I change my rating to 4 stars, as it still lacked some flavor (although that's how a ho ho's cream filling is supposed to taste like.) _________________________________________________________ 4*

Enchiladas

I give it 3 1/2 *'s because it was an all-around great dish that is sure to please people of all ages. However, I with that I had read some of the reviews before making it, as I would have taken some of the suggestions made by other reviewers. (e.g: adding some sauce to the meat, adding taco seasoning to the meat, etc.) It was really only the meat that I found slightly bland, although the sauce that soaked into the tortilla camouflaged this. (BTW, I used the 'Red Enchilada Sauce' recipe from this site, which worked great) Overall, I would say that this is a keeper, as it is easy to prepare and caters to everyone's taste buds. I'll be making it again, with changes! Thanks! :)

Magic Peanut Butter Middles

A real gem. Honestly, one of the most fun cookies to make ever. And it doesn't hurt one bit that they taste like a small piece of heaven. Or a reese's peanut butter cup. ;) I did cut down to 1/3 cup of both sugars and added 2 tbsp. of milk to make the dough come together a bit more, which is why it comes to a 4 1/2 *. Personally, I think next time I won't cut down the sugar, as I felt it made the chocolate cookie part not sweet enough (although I'm quite the sweet tooth!). My mistake. :) Anyways, a staple from now on. I'll be making these often!

Chocolate Chocolate Chip Nut Muffins

Divine! Granted, I took the advice of another reviewer and added a quarter cup more of cocoa powder. I like chocolate :) To lower the fat and calorie count some (I do the same with every muffin recipe; it works amazingly well) I used 2 tbsp. of applesauce and 1 egg white. The muffins rose beautifully and were absolutely delicious. Will definitely be making these again. Thank you for an amazing recipe!

Felix K.'s 'Don't even try to say these aren't the best you've ever eaten, because they are' Chocolate Chip Cookies

When I saw the name for this recipe I thought to myself, "I HAVE to try these." And I'm so glad I did! They're not the chewiest cookies out there, but that doesn't even matter (and I'm a die-hard chewy cookie fan) as they're perfect slightly crunchy. The flavor hits you like a subway and they're BIG. Which I always like. :) I followed the recipe to a T and I'm bringing them to my church tomorrow, so we'll see if it's just me who thinks that these are DELICIOUS!

Good Old Fashioned Pancakes

No tweaking, no adding, omitting, etc. I followed this recipe exactly as written and, the two times that I have made these delicious creations, they have come out absolutely perfect! This recipe is definitely a keeper. The undersides are always cooked to perfection and I think I've had maybe 1 burn out of both batches. And that one, I'll admit, was my fault. :) Thank you for the best pancake recipe EVER!

To Die For Blueberry Muffins

This recipe is by far the greatest blueberry muffin recipes that I have ever made an attempt at. Even my step-father, who hardly ever shows any enthusiasm over any food item that I bake, flips whenever he hears that I'm planning on baking these. These don't really even need a crumb topping, but just for fun, I sprinkled some cinnamon-sugar mixture over the tops of the muffins for the last few minutes of baking time. YUM! Thanks Coleen!

Best Ever Banana Bread

This was an AMAZING banana bread. Super moist and delicious. I'm sure that it'll be gone by tomorrow afternoon. =] I followed the recipe exactly (aside from buttermilk. For that I mixed 1 tsp of vinegar with milk) and it came out PERFECT. Thank you SO much! It's a keeper!
