Cajun Style Stuffed Peppers

Boudreaux's Zydeco Stomp Gumbo

Phenomenal, I use half the oil for the roux, 1tbsp deseeded and deveined jalepeno instead of the red Chiles, 2 links andouille for the sausage, 3-4 chicken breasts, no shrimp, and serve over rice. Yum!

Paprika Pork Chops

Delicious, but only as leftovers when the flavors have had a chance to mingle and the sour cream flavor gets mellower. I didn't like it at first. I looked the chops entirely on the stove, adding the sauce after the first side was done.

Apricot/Cranberry Chutney

My grocery store didn't have fresh cranberries, so I substituted plums instead. Definitely a different (and sweeter) taste than was intended, but it was delicious!

Cold Tuna Macaroni Salad

Wow, delicious! So light and refreshing. I usually make large batches for meals throughout the week, and even after having this many days in a row, I still looked forward to it. Minor modifications: I used about 2/3 the mayo and it still tasted great, I used whole wheat pasta which I think added a bit of complexity (not to mention health), and next time I think I'll chop some dill pickles into it.

Salmon Chowder

I really did not like this recipe when made according to the recipe. Way too salty, thick and buttery. However, when I made it according to some of the reviewer recommendations it easily became a 5-star recipe. Nice and light, and the dill is delicious. Basically, I skipped the cheese, reduced the butter, and sprung for red sockeye canned salmon instead of pink. I'm sure fresh grilled salmon would make this even better, but if I'm gonna pay for fresh salmon, I'm not going to put it in a soup! Just my $0.02.

Delicious! Heeding some other reviewers, I only used half the butter and it still turned out excellent. Note: The original 8-serving yield must be for this as a side dish, because it barely makes 4 entree-sized portions.

Meaty Spaghetti Sauce

Very good! Wasn't sure about the carrot taste in a pasta sauce at first, but it grew on me. Definitely better than the typical pre-made sauces.

Brandy Flamed Peppercorn Steak

Oh my goodness. Quite possibly the best steak I've had, certainly the best I've made. A bit of work, but it's a fun recipe and so delicious. My girlfriend who's grown up eating a lot of steak said it was one of the best she'd had too. 5 stars all the way. No idea how much the brandy does for the flavor, but it was pretty exhilarating to see a huge plume of flame engulf the microwave for a second!

Baked Potato Soup

Very tasty! Added a couple tablespoons of bacon bits instead of frying my own, and used olive oil to saute the onions. Definitely recommended as a hearty comfort-food soup.
