Biscochitos Traditional Cookies

Made these for my family but no one liked them because of the licorice flavor. Made a second time without anise seed and with pineapple juice, and rolled them into balls before baking because I just don't have the counter space to roll out dough. They were gone before the oven was cool. :)

Baked Rice Pudding

I decided to try this even after reading some of the bad reviews. This is a great recipe. I only changed it a little bit to make it taste like my great grandmothers who was born and raised in Mississippi and will turn 108 this October. Cooked the rice in milk, butter and 1/2 cup sugar. I used 1/2 evaporated milk and 1/2 cream, 2 tbsp butter, I only had cinnamon and increased the sugar to 1 cup. This is a very southern traditional rice pudding not the soupy/creamy kind they make in northern states. My kids loved it so much they took some to school for their snack. Not for dieters that's for sure. Works well with soy milk for those who are lactose intolerant. I used vanilla flavored.(second try) Oh and don't forget to spray or butter the dish!!! I will certainly be making this for my Big Momma as a birthday gift.

Chocolate Surprise Cupcakes

Ever since I lost my Hershey's cook book I have missed this recipe and have looked all over for a substitute. I am so glad I found this one. It tastes exactly like my old recipe :) I will make sure to put this one away this time! Thanks!

Old Fashioned Potato Salad

I gave this such a low rating because it wasn't very good as is. Rate it higher with the changes made though. The first time I made this no one ate it. The flavor was horrible and very dry. I tried a second time but omitted the mustard, added bits of bacon and used Light Miracle Whip plus 1/3 cup more instead of mayo and everyone LOVED it. I have been asked to make it at family gatherings for the rest of the summer!

Parmesan Spinach Balls

These came out wonderful but they did take longer to bake than the instructions said. The second time I was pressed for time and my kids wanted them to be cheesier so I added half a cup of shredded mozzarella cheese and I fried them and they came out even better. They are more healthy in the oven but fried is better if you don't have the time or the oven is filled. Great Super Bowl yummies!!

Rosie's Bok Choy Salad

My father's secretary used to make this for company parties and we love it. I lost the recipe but glad I found this one. I did make changes such as half canola oil half sesame oil, white vinegar, used both Bok Choy and Napa Cabbage and I never ever use margarine so I substituded with butter which is much better for you, margarine is disgusting. I also add shredded carrot.

Hearty Breakfast Cookies

Kids did not like the peanut butter flavor the first time I made this. Made second time with very chunky applesauce and they came out just fine and tasted better. I also used pecans, dried cranberries and rasins. Very good recipe without the peanut butter.

Avocado Dip II

I omitted the salsa and just added fresh tomatoes, green onion and 2 tbs of lemon and lime juice. Excellent!

Buffalo Chicken Dip

This was awesome! Made it for super bowl week end and it disappeared. We also spooned the dip into tortillas and grilled as quesadillas. YUM!

Baked Pancake Squares

This was pretty good but I changed a few things. I added 2 TBS more sugar, 1/2 brown sugar,reduced the amount of baking powder and I put on the bottom pecans, 1 cup brown sugar and 1 stick of butter melted in the pan then poured the batter over and baked. They disappeared fast. Even my dad at 3 peices!
