About this Cook
I am a 33 year old single mother of two little girls. Adrienne (10) and Alexis(6). I love to cook for my girls and my oldest helps out a lot. She enjoys cooking and has her own cook books and an easy bake oven.
My favorite things to cook
Baking is my first love. I will bake anything!! Casseroles are my next favorite. I try to make everything healthy as well as yummy. My girls aren't picky so I am able to experiment with all types of foods.
My favorite family cooking traditions
Baking cookies during the holidays is my favorite. My mother and I have to plan which cookies to make because there are so many that the family requests! I also love to make birthday cakes for family members.
My cooking triumphs
My greatest triumph is through my daughter Adrienne. At 8 years old she made lasagna and a caramel pound cake with my only helping with the dangerous parts (using the oven). I am so proud of her! She made an excellent meal and she said she learned it all from me!
My cooking tragedies
My mother taught me to make a caramel glaze for my pound cakes. I made it perfect with her watching but when I tried it at home........I burned the sugar 4 times! The house smell of burned sugar was so bad that we had to open all the doors even with the heat of summer!

Biscochitos Traditional Cookies
Made these for my family but no one liked them because of the licorice flavor. Made a second time without anise seed and with pineapple juice, and rolled them into balls before baking because I just don't have the counter space to roll out dough. They were gone before the oven was cool. :)

Baked Rice Pudding
I decided to try this even after reading some of the bad reviews. This is a great recipe. I only changed it a little bit to make it taste like my great grandmothers who was born and raised in Mississippi and will turn 108 this October. Cooked the rice in milk, butter and 1/2 cup sugar. I used 1/2 evaporated milk and 1/2 cream, 2 tbsp butter, I only had cinnamon and increased the sugar to 1 cup. This is a very southern traditional rice pudding not the soupy/creamy kind they make in northern states. My kids loved it so much they took some to school for their snack. Not for dieters that's for sure. Works well with soy milk for those who are lactose intolerant. I used vanilla flavored.(second try) Oh and don't forget to spray or butter the dish!!! I will certainly be making this for my Big Momma as a birthday gift.

Chocolate Surprise Cupcakes
Ever since I lost my Hershey's cook book I have missed this recipe and have looked all over for a substitute. I am so glad I found this one. It tastes exactly like my old recipe :) I will make sure to put this one away this time! Thanks!
