Slow Cooker Cilantro Lime Chicken

Reviewed: Sep. 5, 2013
This is a must try for picky eaters- I made this last night for my husband and he said it was THE BEST THING IVE EVER MADE AND WANTS ME TO MAKE IT WEEKLY! I followed the recipe (mostly) but used 1.5 lbs of chicken and only 1 T of taco seasoning. I used Newmans' Own mild salsa. I also added some fresh cilantro and lime at the end. I served it with white rice, green beans and black beans, and topped with avocado. Will probably try it wrapped in tortillas next week!

Lemon Zucchini Drops

Reviewed: Jul. 19, 2011
These cookies tasted like bite size zucchini breads! I think the raisins add alot to the taste and texture of these cookies. To make them slightly healthier, I omitted the glaze topping and sugar in the batter. I and replaced the sugar with about 3/4 cup honey. Honey is sweeter than sugar so you can use less and still get sweetness. I also used oat flour instead of all-purpose- it adds a homemade quality. These were so flavorful!

Extra-Easy Spinach Lasagna

Reviewed: Jun. 9, 2011
This was incredibly flavorful, easy, and adaptable to my changes. I can't believe that you don't have to boil the noodles beforehand! I was actually out of spinach (because it went bad), so I mixed basil with the ricotta instead. I made an extra large pan (and could have used twice the ricotta) but I made it work- by adding extra mozarella. I added mushrooms and sauteed garlic to the sauce. The time and temperature suggested in this recipe worked perfectly.

Chocolate Nut Biscotti

Reviewed: Mar. 17, 2011
This is a seriously good recipe. I gave it 4 stars instead of 5 because it is seriously crumbly when cutting into it. I used 1 3/4 c oat flour and 1/4 c cocoa powder to make them chocolate-based. the oat flour gives it an old fashioned/homemade taste. My mix-ins were sliced almonds and dark chocolate chips.

Grandmother's Buttermilk Cornbread

Reviewed: Feb. 11, 2010
This is absolutely a 5 Star Rating! This is how cornbread is supposed to taste! No need to look further, this beats every cornbread recipe I have tried. I added 1/2 can of corn and got rave reviews both times I have baked it as a side with chili.

Pumpkin-Oatmeal Raisin Cookies

Reviewed: Nov. 6, 2009
These were very soft and cake like... I made these alterations: To reduce the fat and add fiber, I doubled the pumpkin (I used one 15 oz can of pumpkin) and used only 1/2 cup butter, and omitted the nuts. I also used 1/2 all purpose 1/2 whole wheat pastry flour. Overall, a tasty cookie if you really like pumpkin and cake like cookies!

Baked Zucchini Chips

Reviewed: Nov. 2, 2009
I guess I would need a mandolin to make these thin enough to get crispy. My zucchini still tasted a little bitter even with the added garlic powder and parm cheese.

Peanut Butter Noodles

Reviewed: May 12, 2009
A great combination of ingredients- I topped mine with chopped raw sugar snap peas instead of onions. I used ground ginger (1 TBSP) which created a little too much ginger flavor for my taste- will reduce the ginger next time.

Oatmeal Pancakes II

Reviewed: Apr. 30, 2009
These were very tasty and smooth! Adding vanilla really made 'em taste good. I used whole wheat flour instead of AP. My only complaint is that they turned out a little flat- I like my pancakes fluffy.

Cottage Cheese Pancakes

Reviewed: Apr. 30, 2009
These were a little bizzare- parts of the cottage cheese melted, and they took longer to cook than regular pancakes. Anyway, these are an acquired taste!

Dark Chocolate Cake II

Reviewed: Apr. 22, 2009
Believe it or not... I used HALF the sugar, and added dark chocolate chunks. Incredible and delicious! I halved the recipe (I baked it to satisfy my chocolate craving), knowing I wouldn't want to share! I drizzled a melted chocolate glaze over the top.

Working Mom's Hamentashen

Reviewed: Mar. 9, 2009
Delicious and easy! I used a variety of all-natural preserves for the fillings, (apricot, blueberry, and strawberry), and chocolate chips for fun. The dough was a little dry, but worked out fine when I added about 1/4 cup water. I used only whole-wheat flour. A BIG BIG hit with my family!

I made this in my grillpan. I salted both sides of the eggplant and let it sit for about 10 minutes before grilling. Turned out soo delicious! Made it with a side of spaghetti w/ marinara sauce.

Banana Coconut Loaf

Reviewed: Nov. 1, 2008
Wowsers. Usually quick breads taste better the next day, but this one tasted amazing right out of the oven. I used 3/4 cup coconut, 1/4 cup butter and 1/4 cup applesauce, added 1 tsp vanilla, 1 tsp cinnamon, used only whole wheat pastry flour, and 1/2 c brown sugar and 1/2 c white. Will bake again, every time I have leftover bananas!

Downeast Maine Pumpkin Bread

Reviewed: Oct. 7, 2008
This tastes 100% better the next day! I was soo surprsed, after reading all of its wonderful reviews, that it didn't taste that good 10 minutes out of the oven. But the next morning, deliciousness!! I used 1/2 c unsweetened applesauce and 1/2 cup oil, 1 C brown sugar, and 1 C white sugar. I'm sure it would be delish with chocolate chips...
