Thai Pesto

Wow, this is a FANTASTIC sauce! I used a gourmet habanero peanut butter so it was extra spicy. I also added maybe 1/2 teaspoon sesame oil because I really like the flavor of it. Was hesitant to splurge on the bottle of fish sauce, but I'm glad I did because I will be making this sauce often.

Tofu Parmigiana

This is delicious, but I've given it only 3 stars because 1) the instructions for coating/breading are insufficient and I had to devise a better way, and 2) I think the dish would be better with a more robust (or even a jarred) sauce. To get my breading to stick, I dusted the tofu slabs in cornstarch and then dipped them in an egg wash before patting them into the seasoned breadcrumbs. I happened to use panko because that's what I had on hand, and I wanted a fuller, crunchier texture to the dish. The breading stayed on the tofu beautifully and left pretty much nothing in the pan! Next time - of which there will be many - I will use my favorite jarred Arrabiata sauce and probably make it my own by grating in a little fresh garlic and adding some fresh basil. Think I'll also use this breaded tofu as a protein source and pasta substitute when making vegetarian lasagna.

Asparagus, Feta and Couscous Salad

I really like this salad, and so does everyone else who's eaten it when I've brought it to work functions or parties. My only recommendations are to 1) use a flavored couscous, such as parmesan and garlic, and 2) salt liberally to bring the flavors of the individual ingredients together.

Stuffed Brie

My guests RAVED about it, but I just thought it was good. Will add more contrasting flavors and textures next time, as well as more finely dice the mushrooms and dates, etc. so it's easier to eat. Definitely worth keeping and playing with the ingredients to suit individual tastes!

I absolutely love this recipe for its simplicity, ease of preparation and taste! Strongly recommend sliced provolone to finish off the sandwiches. I've also used London broil as the meat.

Thai Shrimp Burgers

Wow, are these good! I rarely make repeats, but I've been making these almost weekly since I found the recipe. There is a lot of chopping and prep work, which I try to do in advance; however, the burgers are easy to make, and they taste so clean, fresh and healthy! I haven't fired up the grill for them but have been baking them in my toaster oven instead. I've also morphed these into meatballs and served them over shredded sauteed cabbage and called it Asian Spaghetti.

Pineapple Bread Pudding

I had some King's Hawaiian rolls and shredded coconut left after holiday meals and baking, and I wanted to create a Hawaiian-style bread pudding. Came across this recipe and used it as a great foundation. Based on the number of rolls I had (8) and the number of servings I wanted to make (4), I scaled this recipe in 1/2, but used the whole can of crushed pineapple. I also cut the sugar in 1/2 (after scaling) and omitted the currants/raisins because I added about a cup of shredded coconut and about 1/2 cup of pecan pieces, both of which I toasted slightly (of course, macadamia nuts would have been more Hawaiian, but I didn't have any on hand - will definitely use next time).

Artichoke and Spinach Swirls

These were very good! I added freshly ground black pepper and diced roasted red peppers and took them to work for a Halloween potluck lunch (called them Infected Severed Ears). They were a huge hit, even with the gross, festive name. I strongly recommend freezing the roll for about 30 minutes before trying to cut it into the individual swirls; this will make the roll easier to cut and prevent the filling from oozing out the sides too much.

Lebanese Donair

This was restaurant-quality deliciousness! My only complaints are that the meat was nearly over-cooked at the 30-minute mark, and for some reason there was a lot of liquid that came from either the meat marinade or parsley salad that dripped out & caused the pita to get soggy on the outside. Will make again and try to be more careful about how much liquid I spoon into the pita.

Peach Pie

I had a big problem with soupiness, even after adding 1 T. cornstarch and letting the pie set for about 45 minutes after baking; however, the next day (today), it's perfect. Jumbo peaches were on sale, so I bought 10... only used 5 for this recipe. Think I'll buy another set of pre-made crusts and try it again to see if I can reduce the amount of liquid produced in the pie pan.

Greek Lemon Chicken Soup

I LOVED this recipe! Left out the carrots and added lemon zest, due to personal preferences; also, I didn't have any soup base, so I added some poultry seasoning to compensate. The only issue I had is that I had to add quite a bit more chicken stock to keep the soup "loose". A great combination of fresh and comforting!

Middle Eastern Rice with Black Beans and Chickpeas

Very, very good! Next time I make it, I'm going to swap out 1/2 - or maybe all - of the black beans for golden raisins. I kept wanting a slightly sweet balance in the dish, and I think that would do it.

This is such a good, fast, SIMPLE recipe! My 1st attempt at homemade biscuits and, while they didn't rise to the fluffy heights I had hoped (I think I may have let them sit out too long before baking), they are delicious and versatile. Love that I keep the staple ingredients in my pantry, so I'll always be able to make these in a pinch.

Shrimp Gazpacho

This was VERY good and incredibly refreshing! I tried cutting the recipe in 1/2, but it was so chockful of chunky goodness, that I ended up using the full amount of the Clamato juice. I had about 1/2 a yellow & 1/2 an orange bell pepper, so I diced and threw them in; the only other change I made was that I also added Tapatio Mexican hot sauce (probably about 2 T. in the end) and I upped the salt and pepper to taste. So, so good! Toss in a splash of vodka, and it could be a savory Blood Mary-Sangria hybrid.

Key West Chicken
