Pumpkin Gingerbread

I thought this was excellent. I modified this recipe out of necessity. I had a butternut squash that I wanted to use. I cut it in half and roasted it for 45 minutes in the oven on 375 F. I scooped out the pulp and used that instead of the canned pumpkin. Also, I added a small grating of nutmeg. In place of the ground cloves (which I did not have), I crushed 4 cardamom seeds and added that instead. It came out really well!

Spicy Eggplant

Excellent dish. I added some diced Greek sausage to this meal which added extra flavor, but I think it would go equally well without the sausage.

Bread Pudding II

Mmmm, this was really good. It's simple and appears to be very versatile. I used half-cup of brown sugar, soaked the raisins in freshly squeezed orange juice the night before, and added some marachino cherries I had. It was absolutely delicious. My husband was so delighted and we already have plans to serve it at our next dinner party. I might try making it with bananas and some chopped walnuts next time as the recipe lends itself to flexibility. Delicious!

The Twenty Dollar Burger

This was a great recipe. It was tasty and all the ingredients enhanced the flavor of the beef but did not dominate it. I also added a chili pepper to the mixture for a bit of extra kick.
