Amazing Pork Chops in Cream Sauce

Reviewed: Sep. 11, 2008
I didn't have any wine so I substituted some orange liqueur I had in the pantry which made it extremely rich and delightful. Clean plates all around.

Easy Fruit Cobbler

Reviewed: Sep. 5, 2010
I give this a big BOOYEAH! So easy, so delicious. I made this with fresh picked wild blackberries and (sadly) store bought blueberries and it turned out perfectly! I had to adjust the sugar a bit to accommodate the (sadly) tart blueberries, but that's why we taste our berries first. A winner forever in my book!

Chocolate Pudding Cake II

Reviewed: Sep. 15, 2009
For an easy chocolate fix you can't beat it! I added a pinch of chili pepper to brown sugar/cocoa layer which added a delicious zip to it. Really wished I'd had some cream on hand to balance it out, though - will be sure to have tomorrow with left-overs :)

Di's Delicious Deluxe Deviled Eggs

Reviewed: Jul. 13, 2010
Deeelish! I've never put anything but relish in my eggs before but wanted something new. This is a winner! I did add a smidgen of mustard, though, and used a chipotle hot sauce which gave it a nice smoky flavor. Di, your Delicious Deluxe Deviled Eggs are now in my recipe box! Thanks!

Snickerdoodles III

Reviewed: Aug. 27, 2010
Excellent! Perfect! I had no troubles with this recipe at all. I did make two small changes to suit my tastes: I added an extra T butter and swapped out 1/2 c white sugar for light brown sugar. They turned out so very perfectly!

Chewy Coconut Cookies

Reviewed: Feb. 2, 2011
This recipe is perfect as it is! I followed the recipe as it's written and they were perfectly thin (as they should be), crispy on the edges and chewy in the center. The flavor is delicate so if you're looking for a robust coconut cookie this isn't it. Next time I might try adding a touch of almond extract to make them a little richer...but maybe not. Thanks for this!

Brown Sugar Cream Cheese Frosting

Reviewed: Aug. 21, 2010
Fantastic! I will use this for my cream cheese frosting recipe from now on. Although, on my first round I added some fresh blackberry juice which made it too tart and too soft, so I had to fix it with some confectioner's sugar. But prior to adding said juice it was great!

Microwave Bread and Butter Pickles

Reviewed: Aug. 21, 2009
I just found this recipe this week and holy moly was it easy and absolutely delicious! As good as grandma's but half the energy! I forgot celery seed but substituted a pinch of dill - also, the store was out of turmeric but I managed to eek a little out of their jar - didn't seem to make any big difference. I also didn't have any jars but sterilized an old pickle jar and lid - to my surprise it sealed again! I am soooo making more of these this week and probably will be making them forever more. Thanks!

Peanut Butter Pie VIII

Reviewed: Jan. 21, 2014
Winner winner after dinner! The peanut butter balanced perfectly with the thick custard and light meringue. I used most of the pb mixture on the bottom and sprinkled a circle on the top, leaving a center of toasted meringue - very pretty. Tip: if you're having trouble with your meringue separating, be sure your eggs are room temperature. I started by separating my eggs and leaving them on the counter while the crust was par-cooking. Also, don't wait too long before starting to add the sugar to the whites, the sugar needs to dissolve before it's stiff.

Easy Granola Bars

Reviewed: Dec. 17, 2008
this was way easy and adapatable and yummy! okay, maybe it's not a healthy granola bar exactly but I don't eat granola bars for the health anyway :) I added Goji berries, ground hazelnuts and walnuts and used regular chocolate chips - the goji berries gave them a festive holiday look for the party I went to (cranberries would work the same) and they were gobbled up faster than the chocolate chip cookies on the table. Thanks - I'll use this one over and over again!

Maple Baked Pork Loin Roast

Reviewed: Jan. 12, 2012
Fabulous and oh so easy! I did add some chipotle hot sauce and some chili oil which complimented the sweet nicely. I should think this will also do well with a little vinegar added. I only cook my beef/pork roasts/ribs/racks etc tightly fitted in a foil packet as this recipe suggests...it always turns out fabulous.

Old Fashioned Onion Rings

Reviewed: Sep. 26, 2012
Perfecto! This was my first time making onion rings and I couldn't have asked for a better recipe. I used a sweet wallawalla onion and panko crumbs. Next time I might add a bit of chili flake to spice them up, but as is you can't go wrong with this recipe.

Powdered Sugar

Reviewed: Aug. 21, 2010
Yes you can make your own powdered sugar! I find it's easier to do in smaller batches in a smaller cup. I'm not sure why there is cornstarch added to this, though, it's not necessary.

Chicken Salad

Reviewed: Oct. 17, 2010
Excellent base recipe. Of course, I never leave well enough alone, and the dressing seemed a bit bland, so I added some cumin, paprika and celery salt to my mayo blend which gave it a little kick. Also, I didn't have grapes, chestnuts or bacon but added some apple and chunks of sweet onion. Point is, it's the perfect basic recipe to use and alter per your preference/what's around the house.

No Bake Peanut Butter Pie

Reviewed: Jan. 12, 2012
Fabulous! And so easy. I could only give it 4 stars though since I'm not sure how it turns out with the whipped topping. I, per usual, did not have any on hand, nor did I have heavy whipping cream, which is rare. Being too lazy to go to the store and really craving such a dessert, I had to substitute a mix of additional milk + butter (enough to equal 1 cup). It turned out smooth, creamy and super rich and delicious! Thanks for this!!

Spicy Korean Slow Cooked Chicken (Dhak Dori Tang)

Reviewed: Oct. 14, 2013
Delicious and so easy! Unfortunately, I didn't have any gochujang so had to use sriracha and added a little sugar. It was still fantastic, but I'll have to pick up some gochujang and try again and experience it as it should be.
