Easy OREO Truffles

Fantastic! Yummy! I made these for Valentine's Day and they are excellent. I used reduced-fat cream cheese and reduced-fat Oreos so I didn't feel SO gulity for eating them! After rolling all the balls, I chilled overnight and that helped with the dipping. I used milk chocolate Toll House chips instead of Baker's, but I think the center is what makes this goodie so good anyway! I did have to add about a tablespoon of half and half so I could mix them with my hand mixer. No food processor :( Enjoy!

Buttercream Icing

I would give this 4 1/2 stars if I could! I used it on my son's 3rd birthday cake, and it was fantastic. It was yummy and easy to frost with and pipe. Per my mom's method, I added a tiny bit of lemon extract in addition to the vanilla to cut down on the shortening-y taste. Also, added cocoa powder and additional milk to make chocolate frosting. It held up in the Florida heat and humidity very well!

Honey Roasted Red Potatoes

Had these last night for dinner, and they were fantastic! I didn't have dry mustard, so I added chili powder, some cayenne and some thyme for extra herb flavor. My only complaint is that they didn't get really crispy, but I think I was just using too many potatoes at once. Thanks for sharing a great recipe!

Banana Crumb Muffins

Yum! I added rolled oats for some added texture and fiber. Also used applesauce as a sub for the oil. Love the crumb topping, they gobbled these up at the office.

Strawberry Muffins

I combined this recipe with the cream cheese filling from Strawberry Cheescake Muffins and they were delicious. Followed some others' suggestions and added vanilla and cinammon - Delicious! Thanks for a yummy recipe!

You can make this same recipe with reduced-fat bulk sausage and fat-free milk to reduce calories. Just don't skip the real butter! My favorite weekend breakfast!

Orzo with Chicken and Artichokes

I really liked the idea of these ingredients together, but I used marinated artichokes as some reviewers suggested and just wasn't crazy about the taste - needs some adjustment with the balsamic vinegar too. I will probably try again, using mushrooms instead of artichokes and maybe just marinate the chicken with balsamic instead of making it part of the sauce.

Italian Sausage Tortellini Soup

Yummy! I used parsley and cheese italian sausage, skipped the green peppers and red wine just for personal taste and this turned out great! It came together quickly and I can't wait to have the leftovers for lunch. MUST serve crusty bread with this one. Thanks for sharing!

Turkey, Brie and Apple Sandwich

I make this same sandwich-yummy! To make it 5 stars, use a really good artisan bread and put in in the panini press for a few minutes...gooey brie is the best! Also, I skip the mayo, but that's just personal preference.

Jalapeno Popper Spread

This got rave reviews at my housewarming party and is now a football party staple! The first time, I made it exactly like the recipe, now I use light mayo, 1 block of regular cream cheese and 1 block of the reduced-fat cream cheese. I also add a cup of shredded cheese (usually cheddar). No one noticed the lower-fat subsitutions, still getting raves!!! Thanks for a great recipe!
