Mom's Buttermilk Pancakes

WAY, WAY too salty. I wish I would have read sunfluer's review before I made my pancakes. I'm sure it would have been a wonderful recipe with reduced salt.

Cranberry-Jalapeno Relish

This was SOOO good. I made exactly as written. I made it the day before, 2 hours was not enough time to let the cranberries plump up and the flavors to meld. We had a Tex-Mex Thanksgiving and this was perfect. Very, very good the day after thanksgiving with turkey quesadillas!

Old Settlers' Baked Beans

The best baked beans ever! The only changes I make are to leave out the ground beef (only because I serve it with brisket), no white sugar and add another can of white beans to replace the ground beef. Sometimes I add a couple of shakes of Smoked Chipotle Tabasco sauce and a dash or two of chipotle chili powder. YUM! YUM!

Chipotle Crusted Pork Tenderloin

This was very good! I used a pork loin and roasted it. After reading all the reviews, I cut the Chipotle down to 1 TBS. It probably could have used a little more so next time I will use 1 1/2TBS. Today, I am using the left over with homemade BBQ sauce for pulled pork sandwiches. Try it! You won't be disappointed! (also served with mashed sweet potatoes with a little butter, brown sugar and chipotle powder... YUMMMMY)

Savory Herb Rice

This is the only way I cook rice now. It is so incredibly simple and very delicious! The only change I make is that I leave out the marjoram (I don't have any) and I follow the cooking directions on the rice I am using at the time (as far as rice to water ratio and cooking time). I cook this at least once a week, usually more often.

Roasted Chickpeas

These were really good. I didn't measure the olive oil, but I'm sure I didn't use 2 TBS, probably closer to 1. I also added a dash of onion powder and a little pepper. I cooked for 30 min, shaking the pan every 10 min to mix them up. Mine turned out nice and crunchy. Be sure to pay attention to the part about "Watch carefully the last few minutes to avoid burning." I didn't and some time within the last 10 min, about 1/4 of mine burned.

Baked Spaghetti Squash Lasagna Style

Really good. I just baked it in a baking pan instead of putting back in the shell. I also didn't have vegetable bouillon, so I substituted chicken bouillon and it was good. 1 onion seemed to be way too many. Next time I make it, I will only use 1/2 of an onion. Just like lasagna, it was better the 2nd day.

Black Beans a la Olla

This was delicious! I only had one large onion (it was enough) and had to use Rotel tomatoes instead of fresh diced. I let it cook for about 30 min and served over brown rice. Husband LOVED it!

Quick Chili I

Good chili, except it was a little too sweet. Against my better judgement, I added the 2 TBS of sugar. It would have been better with about 2 tsp of sugar. I served it over Flamin' Hot Fritos, then put a scoop of mac n cheese on top with a dollop of sour cream. OMG it was GOOD. The Flamin' Hot Fritos took some of the sweet away. I also only used 1 can of beans, cause real Texans don't put beans in their chili and I'm still a Texan at heart!! I will use this recipe again and again for quick chili, but with less sugar.

Onion Rice

To Die For Fettuccine Alfredo

Very good. I added fresh minced garlic sautéed in butter. Made it even better with a grilled chicken breast that had been marinated in olive oil, garlic and Italian seasoning.

Easy Garlic Broiled Chicken

Really good and super easy to make. Kids loved it! I used boneless chicken thighs with no skin and baked for 35 min and then broiled for 5 min on each side. Will make again for sure.

Turkey Tetrazzini II

I sauted onion, garlic and celery in the butter, then finished according to recipe (adding a little salt and pepper to taste). I used fresh grated parmesan cheese on top and the stuff in the green can mixed in and it was fantastic. Even my picky eater said "I LOVE this stuff". It tasted great the next day too.

This was SOOOO good! I used fresh white sweet corn. My husband thought it was too sweet with 2 TBS of sugar, next time I will cut sugar in half.

These were super easy and super delicious! I used Splenda brown sugar, which tastes great with only half the sugar. They taste even better the next day after soaking up the butter and sugar. Wish I had doubled the recipe!
