Very light and healthy, yet filling and tasty, this will please your pickiest family members, except the fiercest meat eaters. It was very quick and easy to make and everyone enjoyed it.

This is a giant omelet, but it's not that bad... I guess I was expecting a quiche consistency and more flavor. Very edible for a low key, no fuss meal.

Lime Chicken Soft Tacos

Spinach Lentil Soup

This was sooo good! A bit spicier than expected, but great taste. It didn't look all that appetizing, but the flavor was very nice. I made it as written, except for using a whole turkey kielbasa, not sure exactly how much but probably 10-12 oz.

Spicy Sausage and Rice Casserole

This was fantastic! I used a mix of sweet and hot sausages and 2 red peppers, and omitted the cayenne. The cooking time was too long, after 30 min it was done and the crust dry. The rice on top did not cook, but became chewy (not a bad thing, but would mix half way through the cooking time). Great recipe.

Sour Cream Cheese Casserole

We did not enjoy this much. Most of us ate it, but it was too 'creamy' (fatty?) and slightly nauseating. I couldn't come up with a good side either, I thought of bread to soak up some of the cream, but with the crackers on top it seemed a bit repetitive. All in all, I could do without eating this again.

Dave's Mocha Chicken

Delicious! I used red wine instead of sherry, and the coffee I used was not very strong because we had to keep the kids in mind, and everyone loved it. I also used boneless chicken thighs. Will make again.

Three-Cheese Potato Bake

This was very good, but the title is deceiving. It is really just mash potatoes with a hint of cheese, and does not taste at all like baked potatoes. I mixed in the cheese and put slices of American cheese on top, and the topping was nice and crusty, but you could always skip the baking as it tasted exactly the same after the 20 min in the oven.

Quick and Easy Chicken Noodle Soup

Tastes just like made from scratch, without the chicken fat that floats on top when you boil the actual chicken - so you get the best of both worlds. I used store-bought roasted chicken which was already seasoned to perfection (I know cuz I ate half the bag before using it lol), which I think made it extra yummy (but more expensive). I also used cubes instead of the canned broth, but I doubt it could have turned out any better.

Cola Pork Chops

Absolutely marveous! I saw some reviews saying the sauce was too runny, but mine on the contrary, hardened and stuck to the tray - but the part of it that could be spooned over the chops was out of this world! Sweet indeed, but then again if you don't want sweet you wouldn't pick this recipe :) The meat was not dry, and the sauce did not taste like ketchup. We all loved it.

Chicken with Mushrooms, Prosciutto, and Cream Sauce

Ahh where to start. This recipe is just wrong on many levels. First, the sauce is desgusting. It tastes just like eating sour cream by the spoon. Second, in the time it takes for the chicken to cook through, the mushrooms and garlic will burn. While I am fine with shrunken chewey mushrooms, the burnt garlic turns bitter. Just do yourself a favor and skip this one.

Penne with Pancetta and Mushrooms

Delicious! I gave it 4 stars because the quantities are off - waaay too much pasta for the sauce, so I had to not use quite a bit, which means we will have pasta tomorrow also :) But if you use maybe 8oz of pasta and make the sauce as written, you will love it!

Chicken in Savory Lemon Sauce

This did not taste all that much like lemon, as 1 tablespool of lemon juice can only go so far, but other than that was amazing! very rich and comforting taste. My family dipped break in the sauce and wiped their plates clean!

Lemon Barbeque Meatloaf

This was good, but I wouldn't recommend it for company or picky eaters. The lemon doesn't come through, but the cloves in the glaze are really strong - I would use much less than the recipe calls for. I used 3 eggs instead of 1, otherwise I didn't change anything.

Vegetarian Korma

Yummy! I skipped the jalopeno and used spicy curry instead, but less of it so it was not too spicy. I used more onion, garlic and carrots and kept everything else as written. I never thought Indian dishes can be so quick and easy.

Tender Italian Baked Chicken

I did not care much for this. First, the quantities are too high (especially the bread crumbs and parm, you will throw out a LOT of it) and the cooking time too low. Chicken does NOT bake in 20 min, at least not well done... Other than that it was just ok, bland and not very tender.
