Pot Roast Caribe

This was very good, even though from the large number of ingredients that went in, only a few came through... but I am sure the flavor was a combination of them all. I tend to prefer easier slow cooker dishes where you don't have to use 2 separate pots on the stovetop and it can all be done in the crockpot, but other than that, this was great.

Coconut Curry Cabbage

This was very good and I actually toned down the amount of curry so the kids would eat it and they did. Very yummy way to incorporate cabbage into the menu.

Sauerkraut Hot Dish

Tamale Pie I

This turned out very nice! and not dry at all. Very moist inside, crusty on top, did not stick to the dish at all and satisfied everybody's taste. A bit bland yes, and that might be partly because of the canned olives I used, which had no taste. I suspect fresh olives will improve this pie. As a word of caution, some people may get stomach pains if the cornmeal has not been cooked long enough, so if you are sensitive cook it longer on the stovetop, even though it may get a bit dry.

Garlic Caesar Chicken Tenders

This was ok, but nothing to write home about. I used top quality Caesar-style dressing, but I had to almost DOUBLE THE COOKING TIME! It turned out crispy on the outside and tender on the inside, but I did not like the taste. Very artificial - if you'd like plain chicken dipped in salad dressing, go for this one. It was easy to make, I'll give it that...

Chicken Scampi

I didn't make this with pasta, but a barley dish. I used cream of mushroom soup instead of cream of chicken and lime juice instead of lemon. It was very good and even the kids liked it. My trick is that I brown the garlic separately and only add it at the end, so it keeps its flavor.

Vidalia Onion Tart

Flawless. I don't know about that yielding 8 portions, because I ate about half of it in one sitting :) and the rest disappeared just as fast. Delicate texture, nice caramelized onion taste, perfect balance of ingredients, and not too many of those - which helps with the planning, even though I am not a fan of evaporated milk... Just a perfect vegetarian dish.

Okra Gumbo

I loved this BUT I used peas instead of okra, so I am pretty sure that disqualifies this from being an accurate review. It was yummy though, quanities were perfect and all ingredients blended well together.

Spicy Flat Iron Steak Rub

This was delicious. I changed it a bit and used less of the chili powder I didn't have and replaced that with creole seasoning (also spicy) and garlic herb steak seasoning mix. The oil drizzled on the meat kept the sugar from burning before meat cooked through. Will make again.

Apple Raisin French Toast Strata

Delicious. Since I only have a 5/13 inch baking dish and I used the quantities given, I made two and only had enough apple for one of them. I wonder had I made just one dish, would the apple be enough? I melted the cream cheese and mixed it up with the other ingredients, instead of putting it in in dollops. I also increased the cooking time as per a reviewer's advice, but it came out a bit overcooked, so the 45 min in the oven should be enough.

Sweet 'n' Tangy Pork Chops

I LOVE recipes with few ingredients such as this, preferably that do not need a ton of washing, peeling, chopping etc :) It was absolutely delicious, didn't change a thing but I did cook it for a lot longer in order to get the pork tender and easily cut with a fork. Then I mixed the rice in the sauce. Yummy!

Breakfast Casserole II

This was very average - hence the 3 stars. There is so much one can do with breakfast casseroles, that it was almost a shame this one left out most of the flavorful stuff. The frozen potatoes came out soggy and barely cooked, the canned mushrooms have no taste and only brought a weird rubbery addition to the dish, and the only good thing was the cheesy crust. It also stuck to the baking dish despite a lot of grease. Everybody ate it without major complaints, nobody asked for seconds, and we were all hungry again within the hour.

Peggy's Broccoli Casserole

I am giving it 4 stars because my family loved it, but I didn't care much for it. I thought it was too greasy and not as light as a broccoli dish should be. Maybe it was something I did, because I did make some substitutions but nothing major and actually skipped the cream of chicken and butter.

Simple But Awesome Lemon Pepper Pork Chops

These were good and everyone liked them. That being said, I could barely taste the lemon or pepper. Like other reviewer said, they were bland, but when cooking for kids that is fine. They were tender and no chewey.

Enchilada Casserole II

This was to die for. My trick is that I use meatloaf mix (lamb, pork and lamb) for these casseroles, and that gave it a nice touch. I didn't feel the cumin much but that was not a problem. As most reviews say, it does taste a lot like tomatoes, but that is because it is an enchilada dish :) Everybody loved it. Maybe next time I'll use ground turkey.

Melt In Your Mouth Chicken Pie

This dish didn't come out that well for me. It was very soupy. I used cream of mushroom soup instead of chicken, and store-bought honey-roasted chicken strips which made it yummy, but all that juice was not too appealing. I also didn't see the point of the sliced egg, which was not enough to cover the whole pie anyway.

Three Cheese Baked Pasta

This was as good as a non-vegetarian pasta dish gets. The quantities were perfect and cheeses blended lovely. The only waste was the parm which if added initially will burn and lose flavor after half an hour in the even. If I make it again I will add it 5 min before the time is up.
