Twice Baked Sweet Potatoes with Ricotta Cheese

Reviewed: Mar. 21, 2009
I made these a while back on Thanksgiving and for me they out-shone the bird! I added bacon to half the mixture and quartered the skins into "bite size" pieces before spooning the mixture on top. They plated beautifully and were extremely well recieved. We plan to make them a tradition!

Chocolate Pecan Pie II

Reviewed: Dec. 12, 2008
If you want a pie that looks and tastes as basic and effortless as it can be, this is it. But, it was easy to make and I did have one person compliment it (though my family was very dissapointed, they usually love my pies). I followed the recipe excatly.

Bacon Roasted Chicken

Reviewed: Dec. 12, 2008
Thank you, this was crowd pleaser for sure! The meat almost fell of the bones, infact some of it did as I lifted it out of the pan. I did add some fresh rosemary, garlic and a couple of other spices. Also, I tented the chicken in tin foil so it soaked up the beef broth instead of just letting it evaporate and it was a wonderful meal! TRY THIS ONE FOR SURE!

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

Reviewed: Dec. 12, 2008
I had great compliments on this dish and no left overs, so I'll call it a success. Please remember to bake these on a rack or the grease will be excessive. Thank you for a nice recipe.

Sausage Gravy I

Reviewed: Dec. 12, 2008
This is our new "kick off special" I make it every Sunday for the one o'clock game. It makes a huge batch, is very easy and a huge crowd pleaser over biscuits. I'd give it the extra stars but it does have a fall back (all the guys glued to my couch). Don't be afraid of adding little hot sauce or cayenne ;)

Baked Ziti III

Reviewed: Dec. 12, 2008
I give this five stars because it is exceptionally easy and feeds so many so cheaply. I can even sautee some veggies and sneak them in a corner for myself with no ground beef (section it off w/ a little tinfoil). As an only vegetarian it's very nice to be able to have the same as everyone else with only a little extra work. Also, I have to mention my fiance LOVES this. He begs for it, likes it almost as much as lasagna and I can make it in half the time! It even freezes well. As far as practicality, price and ease go, it's definetly five stars and six if you factor in my guys happiness ;) Thank you!

Coconut Bread

Reviewed: Dec. 12, 2008
Thank you, this was a very nice recipe. I was asked to a dinner and brought this and some coffee along with me. Almost everyone had a second piece. Great for short notices or when you dont have much in the pantry!

Cinnamon Coconut Loaf

Reviewed: Sep. 27, 2008
I also found that I had a problem with the top browning to quicky, though that may have had something to do with me using half yogurt, half sour cream and also half of the oil. In addition I also found that it was a little to sweet, next time I will try with less sugar and less cinamon. thanks for the recipe!
