Stuffed Peppers with Turkey and Vegetables

Reviewed: Jan. 31, 2012
I omitted the tomato paste because I ran out, and the resulting mixture was definitely too thin. Would use a real tomato sauce or put in more than 1 tbsp tomato paste next time.

Greek Pasta Salad

Reviewed: Nov. 16, 2010
It's a little bland, but tastes alright. Waaaay too much oil though. I'd use half or less if I made this again.

Spicy Pasta

Reviewed: Nov. 15, 2010
I used half a chile pepper and no hot sauce, and my face was burning for hours afterwards. Guess I'm a wimp when it comes to spiciness :)

Peruvian Lomo Saltado

Reviewed: Sep. 1, 2010
Super quick to make and tasty! Next time I will make my own fried potatoes though, because McCain superfries are just as gross as I remember from my childhood. Couldn't find any aji amarillo, fresh or otherwise, at a couple of grocery stores so you may need to go to a specialty shop; I used cayenne pepper instead. I marinated beef tenderloin for approx 30 minutes beforehand in the vinegar/soy sauce/cayenne pepper mix with some salt and pepper and then poured in more vinegar and soy sauce once everything went back into the pan.

Garlic Chicken with Orzo Noodles

Reviewed: Aug. 24, 2010
I cooked the orzo in chicken broth as suggested by others. I imagine this dish would be pretty bland without it, but be careful: it does increase the saltiness of the dish. With the broth and olives added, it definitely turned out on the salty side. I used oregano instead of parsley and omitted the spinach. Next time, I will try it with tomatoes, as suggested, and use less oregano (I used 1/2 tsp per serving).

Citrus Chicken and Rice

Reviewed: Apr. 7, 2010
chicken is WAY too bland, even with the modifications of other posters (lemon pepper on chicken, lots of diced garlic & maybe 4 tbsp of lemon juice). rice was ok with all of the extra lemon juice, but i won't be making this again.

Sweet and Sour Chicken Stir Fry

Reviewed: Nov. 24, 2009
This was ok, but not spectacular. I liked the addition of the red pepper to give it a little kick, but I'll stick with Sweet & Sour Chicken II from this site for my sweet & sour chicken needs.

decidedly OK. peppers do get mushy. maybe throw them in later. next time, i'll probably heed the advice of others who suggested a bit more seasoning .

Unbelievable Chicken

Reviewed: Sep. 2, 2009
The sauce is delicious! I added just a hint of fresh mustard (I'm not a huge fan) and it gave it just the right kick! If you're going to be making this in the oven, be aware that you do need to marinate ahead of time (not just during cooking) or the sauce will not permeate the chicken.

Rosemary Pasta in Roasted Garlic Sauce

Reviewed: Jul. 7, 2009
I heeded the warnings from other reviewers about blandness and so used the full amount of rosemary. I love rosemary, but this was way too much. Not only was the taste overpowering, but it affected the texture as well! I used 3/4 cup chicken stock plus 1/4 cup white wine as well as a splash of lemon juice and the sauce taste was good, notwithstanding the rosemary!

Joel's Jerk Chicken Pineapple Pasta

Reviewed: Jun. 19, 2009
Nice blend of sweet and spicy, but nothing spectacular. Sauteed some onions first, then threw the chicken cut into bite size chunks in to cook with it, then added green and red peppers along with the seasonings and extra pineapple and juice. Used Jerk Seasoning from this site, omitted coconut (not a fan), added and served over rotini pasta. I think it would be much better served over rice. Don't skimp on the pineapple - it really served to offset the spiciness.

Skillet Apple Chicken

Reviewed: May 12, 2009
I made a lot of changes to this and the resulting recipe was really tasty. Firstly, I fried some onion in olive oil. When the onion was softened, I added 2 minced garlic cloves and cooked that for about a minute while stirring. Then I added the chicken seasoned with salt and pepper, cooked for 5 minutes, then flipped the chicken and added two thinly sliced apples, 1 tsp crushed dried rosemary, 1 tsp pumpkin pie spice, and some apple juice in which to braise the chicken. I covered this and let it simmer over low heat for 20 minutes. When it was finished, the apples and onion had softened together and I had a really nice thick sauce on top. This was great served over rice! With my modifications I'd give this recipe 5 stars, but I would find it too bland and dry without the onions and apple juice. Thanks for the great starter recipe!
