Sam's Famous Carrot Cake

I made this recently since it has all the goodies I like in it. I followed others suggestions and baked in a 9 x 13 glass pan. I used Cream Cheese Icing III from here to frost with and it was wonderful. The batter looked really wet to me so I added an additional 1/2 cup of flour and it turned out perfectly. It does seem to get moister as the days go on. I will be making this one again.

Delicious Ham and Potato Soup

We loved this soup. I did add lots of additional veggies like parsnips, corn, mushrooms and additional celery and carrots, basically cleaned out the fridge. I also added some instant potato flakes to thicken it up a bit more but am very pleased with this. I will make this again.

Cake Mixes from Scratch and Variations

The flavor of this is wonderful. I attemtped to make a pineapple upside down cake and used this recipe, following the instructions in the 1st review. It tastes wonderful and is nice and moist but I had a huge problem with it not getting done in the middle. After baking it a bit longer, I finally scooped out the gooey raw part from the middle and put it back in the oven all by itself so as not to dry the rest of the cake out. The outside part was perfectly cooked, my middle just wouldnt get done. My oven is not completely reliable, so I will blame this on my oven, not the recipe. After the middle part finally got done, I just dumped the whole thing in a pan and will cover it up with whipped cream. Looks pretty bad, but tastes really good. I will make this again.

Black Forest Dump Cake II

This was wonderful! I used frozen cherries instead of canned, since I had some. I also used a bit more butter, just to make sure it all got covered. Hubby said this is a keeper!

Mountain Dew™ Cake

Pretty good. Not the best I've made but still pretty good. Hubby asked me to make it next time with white cake mix instead of lemon since he's not as big of a lemon fan as I am. Cake is very moist. Good recipe though.

Country Apple Dumplings

I halved this recipe and it was gone in a flash! Hubby LOVED it! Said I could make it again any time, and since we just bought a bushel of fresh apples, it looks like we'll be having it again and again! I did use half brown, half white sugar as suggested in other reviews. I was afraid it would be too sweet but it was wonderful and rich.

Apple Crisp IV

This was really good. I have not made apple crisp before but this one appealed to me since it had so much of the crisp part. I did add sugar, cinnamon and lemon juice to my apples as other reviewers suggested and it was plenty juicy. I did overcook it a bit as the topping was so thick it didnt seem done at 1st. It was still wonderful. I will make this one again next time I have apples to use up.

Pumpkin Cream Cheese Muffins

These were really good. Hubby and our houseguest loved them. Even the dog loved them. I made 18 muffins and some of them did not have a definite cream cheese layer but were still good. I used vegetable oil instead of olive oil. I also used almonds in the topping since thats what i had on hand. Seems like they took forever to mix up and get ready to go in the oven, but maybe it was just too early in the morning for me. Not enough coffee yet. Hubby said these were a keeper.

Chocolate Chip Toffee Bars

These are wonderful. Very rich as others have noted. Hubby and roomate LOVED them. I think next time I might put butterscotch or peanut butter chips on top for a variation. These are a keeper!

Christmas Dip

This stuff is absolutely wonderful. I was looking for something to use up a bit of leftover brie and found this. I actually had all the ingredients on hand. I did add just a tiny dash of maple syrup because when I initally tasted it, it was way to salty. After refrigerating it overnight, it turned out wonderfully. There were 2 cheese balls there tonight, only mine got nearly devoured, lol. I am taking another one of these to another dinner in a few days. I did try the suggestion of a gingersnap and it is indeed different. It was too "gingery" for my tastes but others may like it. A less salty cracker like Wheat things or water crackers would be great with this. It is extrememly rich, but really good!!!

Southern Living Magazine's King Cake

This came out beautifully. I was out of sour cream so I used heavy cream w/lemon juice added and it worked out wonderfully. I added some vanilla extract to the dough and a touch of cinnamon as well. I also omitted the raisins. My husband and roommate both loved this. Its not terribly sweet and will be wonderful with coffee in the morning.

Chewy Cinnamon Bars

MMM, These are really really good. I cut the butter down a bit per other reviews. I also accidently melted the butter when I was softening in the microwave so not sure what effect that might have had on them. The only thing I wasnt thrilled with was that they seemed to take a really really long time to get done in the middle. I ended up turning the oven temp down a bit to make sure the middle was done and the outside edges werent overcooked. I added a few white chocolate chips as thats what I had on hand. My husband LOVED them. Will definitely make them again.

Cherry Chocolate Brownie Cheesecake

YUM!!! I made this yesterday on a whim and because I had some cream cheese to use up. Its over half gone already! I did modify it a bit based on what I had on hand. I didnt have an 8oz brownie mix, so made one from scratch using the Hershey Best Brownie recipe. I also used a 9x13 pan since I dont have a springform pan. I also added chopped frozen dark sweet cherries on top of the brownie layer and added almonds to the brownies. Its wonderful. I have a new favorite dessert and this is it!!

Beef Stifado

Found this recipe while looking for something different to do with beef stew meat. I was attracted to it because of the spices and how different it sounded. I had to modify it somewhat based on what I had on hand. I didnt have an orange, so added a tiny bit of lemon zest. The only diced tomatoes I had on hand had green chiles in them so I used it. It actually made it quite nice with just a tiny spicy bite to it. I made this in the crockpot and let it cook all day. I didnt have any boiling onions so used regular yellow onions, roughly chopped. I removed some of the liquid after it was cooked and thickened it with flour and added it back in and let it thicken. We ate it over buttered egg noodles and we all loved it. I will be making this again.

Chocolate Chess Pie I

This turned out really good. The texture is just what I expected it to be. I did add a tblspn of flour after reading other recipes and suggestions. I also didnt have evaoprated milk but was able to substitute what i had. MMMM.....

Peanut Butter Fingers

Made these for hubby. He LOVED them. I did as other reviewers suggested and baked in an 8x8 pan. I also used chunky peanut butter. They go together really fast and easy too. These will get made on a regular basis around here.

Chewy Date Nut Bars

These are really really good. And sooooo easy...I pretty much just dumped it all in the kitchenaid ....I did add a dash of vanilla and a bit of pumpkin pie spice and cinnamon....These just might be my go to recipe when I need my date fix!
