About this Cook
I am a Head Start teacher in the State of Maine. I enjoy cooking with my students regularly so I am always looking for healthy easy recipes. I have two teenage boys who are very creative and musically artistic. I recently got remarried to the absolute love of my life. My husband enjoys helping me experiment with new recipes. It is one of our favorite past times. The kitchen is the place to be at my house. Friends and family are important to me. Visitors to my home enjoy the fact that they can always smell something cooking when they walk through the door. I spend summers camping on the river in our beautiful state. I switch from baking in the oven to cooking over the open fire when June hits. I enjoy my life and I love to cook.
My favorite things to cook
I enjoy baking most of all. Trying new recipes and dishes that are as pleasing to the eye as they are to the stomache is a passion for me. I also enjoy experimenting with herbs. My husband has recently taken up gardening and kindly plants a few rows of fresh herbs for me. This is a new hobby of mine, I am just learning how to experiment with fresh herbs.
My favorite family cooking traditions
My dad does not cook! However he has been making his great grams homemade doughnuts for as long as I can remember. He still makes them in the cast iron pot she used when he was a boy and refuses to use anything but real lard in his doughnuts. My dads squash doughnuts cannot be outdone. They are truly the best doughnut you will ever taste. sorry everyone, that's one recipe my dad has sworn me to secrecy on. I will have to take it to my grave.

Every new recipe made that pleases my friends and family is a trimph to me.
My cooking tragedies
I must admit I cannot make fudge or buiscuts. I don't know what I do wrong but neither one ever comes out very good. anyone have any tips?

The Real Mojito
I make these often but replace the rum with vodka as rum doesn't agree with me. Every time I serve them I get the same response. "so refreshing!"

Mexican Chocolate Cake
Great cake. I love the cinnamon flavor but also disolved a rounded teaspoon of instant coffee in hot water and added that as well. I find coffee and cinnamon both compliment chocolate very well. I also topped it with a caramel sauce made from scratch. It was a hit. My son has requested it for his birthday. Thanks for submitting it.

White Chocolate Raspberry Cheesecake
I've made this cheese cake a few times and it's a big hit every time. My sister suggested I use seedless raspberry preserves to cut down on the time it takes to boil down and strain fresh berries but I have to say the flavor was not nearly as good the one time I did it. It is definitely worth the effort to use fresh berries. This is a great cheese cake. I wouldn't change a thing.
