Vegetable Quiche Cups To Go

This recipe is from the South Beach cookbook from many years ago. It's a great go-to breakfast. It's easy to make, freezes well, and is very satisfying.

Baked Omelet Squares

This was a great casserole! I left out the ham, but that didn't take away from the deliciousness of this dish. It reheated well in the microwave. I'll be making this recipe again and again.

Egg in a Boat

My mom made this for me when I was a kid (I'm a senior citizen now) and I made it for my son when he was growing up. We called it a "cowboy eggs." Delicious, fun and easy!

Holiday Chicken Salad

This chicken salad is excellent! My guests RAVED that it was the best chicken salad they had ever had. I followed the suggestion of others to mix the seasonings in the mayo first. I also used the mini-bell peppers (the kind that come in a large package with red, yellow and orange peppers) for extra color. Thanks for sharing this wonderful recipe! My guests asked for a copy before leaving.

Suki's Spinach and Feta Pasta

Easy to make and very tasty! I used whole wheat bow-tie pasta in place of penne, and used grape tomatoes, sliced. I doubled the recipe and had plenty for dinner and to take for lunch the next couple of days.

Turkey and Quinoa Meatloaf

This was the best of all of the ground turkey recipes that I've tried. I'm not 100% sold on a sweet topping, but it tasted better the second day. I actually used a quinoa and brown rice mixture - very good! Will definitely make this again.

Egg Sandwich

I've been making micro-eggs for many years. Spray a large coffee mug with no-stick and add eggs. I use Egg Beaters instead of real eggs. I also dice a wedge of light Laughing Cow cheese in the mug before cooking. My microwave is 1100 watts and I cook it on high for 1 min. 45 seconds. Easy, quick and delicious.

Cracker Candy

This is a old-time Passover candy recipe - but instead of saltines, you use matzah. Use only brown sugar, put slivered almonds and chopped pecans in the butter/sugar mix - pour over crackers/matzah. Put in an 350 F oven for appx. 7 minutes. Sprinkle semi-sweet chocolate chips over the top. As the chips melt, spread with a knife. BTW, spray the rimmed cookie sheet with no-stick prior to laying out the crackers/matzah. Let cool in the pan (no need to freeze!). Break into small pieces to serve. Delicious!! I rated 3 stars because it uses white sugar instead of brown, the oven temp. and the oven temp. is way too high.

Working Mom's Hamentashen

This recipe is missing an important ingredient - the liquid. My preschool has used a similar recipe for years with great success. Use 1 box of yellow cake mix (Duncan Hines is pareve), 3 eggs, 1/2 C orange juice and 2 1/2 C flour (add more if the dough is sticky). Fill with your favorite preserve & pinch closed. Bake @ 350 for appx. 10 - 12 minutes. Use a touch of water to seal the edges of the hamantachen. Enjoy!

Marinated Mushrooms II

For whatever reason, this recipe did not go over well. I made it as a "pitch-in" item for our family Thanksgiving dinner, and most of it was left. My husband and I thought that it was fair at best. For the record, I followed the recipe to the letter.

Two Ingredient Pumpkin Cake

I've used this recipe for the past 2 years to make pumpkin muffins. I use the foil cupcake liners placed on a large cookie sheet; this eliminates the need for cupcake tins - and no need to wash a baking pan! We love this recipe!

Panzanella Panini

This sandwich was very easy to prepare, looked beautiful on the plate, and the best part - it was delicious! I used Trader Joe's Marinated Mozzarella for the cheese which has olive oil, garlic, red peppers,and salt. I did not add salt or pepper to the recipe, but did brush the outside of the bread with olive oil before grilling on the George Foreman. What a wonderful sandwich!!

Chicken Quesadillas

Great recipe. I used the homemade fajita seasoning suggested by one reviewer, which was good, except too salty. I would reduce the amount of salt used the next time I make the seasoning. Also, I would shred the chicken a bit the next time I make this recipe. We really enjoyed the flavors and it was visually very appealing! Thanks for sharing this recipe.

Delicious Matzo Candy

I've made this every year for the past 20 years;it is my most requested recipe from friends and family. Instead of walnuts, I use 1C chopped pecans and 1C slivered almonds. Melt margarine (to be pareve) or butter (dairy) w/1C brown sugar, pecans & almonds, bring to a boil, then let simmer for 2 minutes. Pour over large matzah boards placed on a greased rimmed cookie sheet (break to fit - leave no holes). Bake @ 350 for 7 - 10 minutes (middle rack). Remove from oven & sprinkle w/semi-sweet chocolate chips; spread chocolate. Allow several hours for chocolate to harden. Delicious!

Easy Pumpkin Muffins

I've made this recipe with my pre-school class and it was a big hit! As others have suggested, I use one box of spice cake mix and one can of pumpkin puree. For home enjoyment, I add dark chocolate chips. These muffins have become a snack-time staple. Thanks for a great recipe!
