this meatloaf is excellent! my husband asked if i could cook it from now on, and i didn't think he liked meatloaf. i soaked the bread crumbs in the milk for 2-3 minutes and it was very moist. great recipe!
UPDATE: Ive been making this once a week for a while now. My husband STILL gets excited when i make it. I put a whole onion, 1-2 tablespoons minced garlic, and whatever cheese I have- it IS better if you cube it not shred- and i have never had it bubble out of the pan. For the topping i mix ketchup, barbeque sauce and brown sugar, this gives it a little kick and browns really well. I found that cooking in a glass loaf pan is so much easier to clean and it doesn't stick to the sides as much either. Make this meatloaf! You will love it!
