McCormick® White Chicken Chili

Reviewed: Dec. 21, 2011
Really good! I added an onion, garlic, one 11 ounce can of corn and another can of white beans. I also added some dried cilantro. I substituted low-sodium chicken broth for water and increased by another cup. Next time I will do half water and half broth, cause it was still a little salty. I think the corn really kicked it up another notch. Will definitely make this again!

Grilled Bacon Jalapeno Wraps

Reviewed: Dec. 6, 2011
Out of this world good. I impressed everyone with this! I did wear gloves when i de-seeded but only because I have a baby and didn't want to get anything on her. I made them the day before, refrigerated for 24 hours and baked them in the oven. Delicious! They were not hot at all tho, I may try leaving some seeds next time, or not refrigerating before hand.

Baked Salmon II

Reviewed: Dec. 6, 2011
I love salmon and cook it often. This is very good. I did not have time to marinate this, just long enough for the oven to preheat. I used dried parsley, and I only used 4 Tbsp of olive oil. I did think it was a little salty. I will make this again and cut the salt in half. Otherwise, very very good!

Black Bottom Cupcakes I

Reviewed: Nov. 26, 2011
These are pretty good. I made no changes the first time i made them and i was a little disappointed. The middle was not gooey at all. I made them again and omitted the egg, warmed the cream cheese and baked for 23 minutes. I could actually taste the cream cheese then. My niece thinks the cake portion could be sweeter but i thought they were fine. They are much better cold, don't eat them right out of the oven. they are richer once the chocolate chips set up again.

Old Fashioned Mac and Cheese

Reviewed: Nov. 26, 2011
This is really good! I didn't put any butter on top and didn't miss it. I love Velveeta, but I didn't like it in this dish. I added half colby and half sharp cheddar and the swiss, but next time I will add more colby and no velveeta. My niece and very picky 10 yr old nephew had seconds. The onion really added great flavor. Great recipe if you like cheesy macaroni!

Great Salsa! could have had a little more heat, next time i will add more jalapenos but this was a hit! The teenagers were snubbing their nose at it while i was making it, but they tore it up when it was done!

World's Best Lasagna

Reviewed: Jun. 4, 2011
This was good. It didn't blow me away. I soaked the noddles in hot water for 20 minutes, great tip- thanks. Did not simmer sauce either. Put it all together and cooked it the next day. Everyone said it was great, I just think it was missing something. I used fresh basil. Could not find fresh parsley, maybe that was the problem.

Incredibly Cheesy Turkey Meatloaf

Reviewed: Apr. 20, 2010
this meatloaf is excellent! my husband asked if i could cook it from now on, and i didn't think he liked meatloaf. i soaked the bread crumbs in the milk for 2-3 minutes and it was very moist. great recipe! UPDATE: Ive been making this once a week for a while now. My husband STILL gets excited when i make it. I put a whole onion, 1-2 tablespoons minced garlic, and whatever cheese I have- it IS better if you cube it not shred- and i have never had it bubble out of the pan. For the topping i mix ketchup, barbeque sauce and brown sugar, this gives it a little kick and browns really well. I found that cooking in a glass loaf pan is so much easier to clean and it doesn't stick to the sides as much either. Make this meatloaf! You will love it!
