Chicken Pot Pie IX
I gave this 2 stars because like everyone else I made a LOT of modications to the recipe. It was a good starting point, but I could tell by reading the recipe and the reviews it would be too bland and dry for my taste. I added chopped garlic, poultry seasoning, celery salt, savory and more pepper. I'm a vegetarian so I used Morning Star Chix'N Strips instead of real chicken, also used organic frozen peas and carrots. I added 3 gold potatoes, cubed. I boiled the potatoes in 2 c. vegetable stock with extra seasonings and white cooking wine, then added peas and carrots last. Also used a can of cream of mushroom soup and 1 cup whole milk. Also used Pepperidge Farm frozen Puff Pastry for top and bottom crust. I baked the crust before filling as others suggested but the puff pastry still got too stringy and wet on the bottom. Impossible to cut through. But the pastry on the TOP was flaky and delicious. If I make this again I will only have a top crust or I'll make real pastry crust. The flavor was very good even with the fake chicken. So I guess the summary is that when it was all over I ended up with a totally different recipe than was given here! My opinion is that the recipe as it stands looks incredibly boring, dry, and bland. The end result of all my modifications I would give about a 4 star rating. Husband thought it was good but not great.
