Fluffy Canadian Pancakes

This was a light, fluffy pancake, but I thought it lacked something. Salt? Sugar? It needed a little something, but overall was pretty good.

Curried Coconut Chicken

My husband and I both loved this recipe! The only changes I made to the original were to use more curry powder, and add some hot chili powder and green peppers. Delicious!

Chicken Broccoli Ca - Unieng's Style

I followed the directions exactly, aside from adding the broccoli and bok choy at different times (so they wouldn't get mushy). I'm glad I tasted it before serving because it was very boring and had nowhere near the flavor I was hoping for. I ended up adding more soy sauce and some Thai spicy jelly sauce I had on hand to make it more interesting. It's a good base for a stir fry, but not that great.

Old Fashioned Coconut Cream Pie

The best coconut cream pie I've ever had!!! Definitely use 1 can of coconut milk in place of part of the half and half, it makes all the difference!

Tortilla Soup II

Delicious! I threw everything in the crockpot for a few hours and it turned out great. I also added black beans and used NM green chilies for extra kick. Next time I'll remember to add corn. I also toasted tortillas and sliced them to put on top along with the cheese and lime. Will definitely make again!

Good, basic, yummy casserole. I liked the spices, but found it a bit oily. Next time I will drain the meat better and use less oil than it calls for.

Balsamic Roasted Pork Loin

This was absolutely delicious!! I've used it a couple of times; the first with two smaller pork loins and the second with one larger one. I would definitely recommend using two small ones since they were so juicy and flavorful. Great recipe!

Downeast Maine Pumpkin Bread

I loved this recipe! I made two changes: I used 1 c. whole wheat flour and cut back the sugar to 2 c. I made 1 loaf and 12 regular-sized muffins. Next time I make it I will use applesauce in place of the oil, more whole wheat flour, less sugar, and some nuts. Delicious!

This was very good. I took the advice of others and doubled the sauce. I also didn't have rice wine, so I used 1/2 the amount called for and used rice wine vinegar. Delicious!

Delicious! I took an idea from another recipe (Pesto Pizza, found on this site) and added 1/2 tsp. oregano, 1/2 tsp. basil, and 1/8 c. Parmesan cheese to the dough. I will definitely make this again!

Fettuccine with Sweet Pepper-Cayenne Sauce

I thought this recipe was absolutely delicious. My husband, who is kitchen-challenged, made most of it with a little guidance from me - and it turned out perfectly! The sauce was not runny at all like some other reviewers commented, and we enjoyed the heat from the cayenne pepper. I will definitely make this again!
