Seven Layer Taco Dip

Great recipe and just what I was looking for! I was feeling a little lazy and got prechopped lettuce and tomatoes, so this was super quick too! Used low fat cream cheese and sour cream and it still tasted fabulous. Next time I would either half the cream cheese/sour cream mixture or double the beans, Seemed a little off, but that's ok. I put some seasoning in the beans, but a majority of it in the cc/sc mixture, which i saw in another recipe. I could have eaten that alone! I layered the beans, cheese mixture and salsa and put it in the fridge to sort of marinate, and put the rest of the toppings on right before I served it. Left out the peppers and onions. Didn't seem right to me, and just enough olives on top for a lovely presentation. About the wateryness people are complaining about: Might be the salsa you're using. I used one that's real thick and chunky and that seemed to help. It was only after a few days in the fridge that it started to look a little watery. Was still yummy though.

Honey Mustard Grilled Chicken

The dijon, honey, mayo mix here is what I usually use for a homemade dipping honey mustard (which I love) and thought, oh what a good idea, I'll cook my chicken in it. Very disappointing! The flavor was bland and the cooked mayo thing was just kind of weird. Edible but will not be making again. I wound up just adding some salt to the chicken and dipping it in the regular sauce anyway.

Chicken Marsala

Quick and easy and even better with a few modifications. After I browned the chicken with some garlic cloves, I took it out and proceeded to cook the mushroom wine sauce. Somebody already said it but I'll say it again, why brown it if you're just going to drown it? Anyway, I left out the sherry and added a chicken bouillon cube or two and some heavy cream at the end (I rarely measure anything). Served it with homemade garlic mashed potatoes and green beans. Can't wait to make it again!

Cordon Bleu Chicken Rolls

So I made the actual chicken cordon bleu my way, (filleted but not the whole way through chicken breast with deli meat and panko crumbs) but i wanted to comment on the sauce. It's an interesting taste I will say. I added some white cooking wine to it because it was really thick and some other spices. By itself i really didn't like it but I tried it with the chicken and was surprised how good it came together! I don't think the chicken NEEDS it, but I had all the ingredients and wanted to try it and was pretty pleased.

Sandy's Casserole

This was pretty good. Kinda like mac and cheese with chicken and veggies. Better than tuna casserole. I used fresh chicken that I boiled with some garlic and spices, added broccoli, parboiled the macaroni and crushed croutons/cheddar on top the last 10 minutes of baking. It was even better the next day too. I froze a couple of individual containers for when I'm out of food.

Chicken Spinach Quiche

Good and easy recipe! This was my first time making quiche. I had all the ingredients on hand and love that I now have breakfast for a few days. I followed the recipe pretty closely only adding 2 more eggs, a little more cheese and foregoing the crust to make it a little healthier. I will definitely be making this again and try experimenting with different fillings.

Chicken Salad with Bacon, Lettuce and Tomato

The Worcestershire and lemon give it just the right zip. I seasoned my chicken while cooking, used miracle whip, omitted the avocado, served over iceburg with a side of cucumbers and crusty bread. Oh, and added a little shredded cheese on top. Very refreshing!

Buffalo Chicken Dip

Wow this was awesome! I love buffalo chicken anything. As some others had mentioned, I couldn't bring myself to use Ranch so I stuck with traditional blue cheese dressing and served it with Tostitos. I was strapped for time so i used canned chicken, which i'm usually not a fan of, but thought it tasted just fine (making it with fresh chicken is too much work for just dip and the hot sauce and blue cheese overpower it anyway). I think it tasted even better after it sat for a little bit. I would suggest maybe adding a little more chicken than this calls for. Took this to a party and got so many compliments!

Sun-Dried Tomato Pesto

Great starting point. I wanted to recreate the sun dried tomato pesto a local restaurant makes. Turned out great! Didn't follow it exactly - didn't really measure and omitted the pine nuts, red wine, and tomato paste. I think a couple of splashes of balsamic vinegar and some fresh tomato really made this. Boyfriend loved it and even thought it was better than the restaurant's (less oily he said)! Just served it with a loaf of Italian bread as a little appetizer.

PHILLY Creamy Basil and Red Pepper Pasta

This was ok. Good on a night I had all the ingredients and didn't want to order food or go grocery shopping. I just now realized that it calls for only half a cup of basil, I think I read it as 2 cups! Oops. The flavor of this is very strong, probably from all the basil of course.

Salsa Chicken

Wonderfully simple, and made up of things I sometimes already have in the kitchen. I used Taco Seasoning I from allrecipes, just lightly sprinkling some on and rubbing it in. You don't need much since it's such a strong flavor. I also like to use a combination of mozzarella and cheddar.

Mouth-Watering Stuffed Mushrooms

Delicious! Easier to make than I would have thought. I took the advice of others and added crumbled bacon one time, and ground sausage another to balance out the strong creamy flavor. Great idea. Though both were good, I preferred the sausage, my b/f liked the bacon. Also used romano instead of parmesan as that's what i have in my fridge and actually prefer. Also topped the mushrooms with a blend of bread crumbs and romano. I personally like the little bit of crunch to again, offset the strong taste.

Pepperoni Dip II

This is one of my favorite treats. I sometimes use reduced fat/sodium cream cheese and soup, can't taste the difference. I don't think you need all the extra fat/sodium since I think the pepperoni pretty much covers it! I also blot it with paper towels once or twice while it's cooking. I'd have to say pita bread is my favorite to eat with this out of all the bread combos I've tried.

Appetizer Mussels

Great recipe! My boyfriend and I always order mussels in red sauce when we go out to Italian restaurants so for a special treat, I thought I'd try making them at home. Success! I made a few changes as some had suggested. I was pretty liberal with the measurements of the the white wine, clam juice and tomato juice. I added some diced tomatoes, fresh parsley and basil, salt/pepper, minced onions and a little more garlic. This, a salad with oil/vinegar and a loaf of baguette and you got yourself dinner. Can't wait to make these again.
