BBQ Feta and Hot Banana Pepper Turkey Burgers

These were simple, quick, and delicious! I used garlic salt and added a slice of 2% pepperjack cheese on top, and served on a whole wheat bun...yummy favorite in our home now!

Spinach Stuffed Chicken Breast

My hubby declared this chicken (along with pumpkin casserole)his favorite meal...restaurant or otherwise! We have never been more impressed with a recipe! These look gourmet and taste heavenly! I did make a few changes: rubbed the outside of the chicken with salt and red pepper flakes, partially cooked and peppered the bacon, sauteed the spinach with salt and pepper and garlic instead of microwaving, and added feta to the spinach mixture. The chicken was spicy and moist and not as messy as I thought. THESE WERE WONDERFUL!!!

Easy Deviled Chicken

Pretty good! I cooked the chicken in a skillet first with lemon pepper and then coated. I also used Light Miracle Whip and honey dijon mustard. I'll definitely be making these again!

Spinach-Stuffed Flounder with Mushrooms and Feta

These were impressive-looking and yummy! I seasoned the spinach mixture and the fish with lemmon pepper and doubled the feta. I also added 1/2 slice of american cheese on top of the spinach to make a melty, gooey center. Really good!

Jalapeno Pie Mini Tarts

These are a favorite with my family for parties and as a fun side for mexican dishes. The egg is less messy if you take your time pouring it in from a measuring cup. It is tedious but SO worth it!

Mexican Baked Fish

I made this last night, and my husband immediately said it was a keeper! I cooked the fish in a skillet with lemon pepper for 2 or 3 minutes, then followed the recipe. I did use multigrain tortilla chips and 2% cheese and just added a thin line of sour cream with a dollop of spicy guacamole in the middle. DELICIOUS, healthy, and quick for a weeknight dinner!
