I'm an advanced practice nurse in Houston, now single again, with a teenage daughter who cooks with me at times.
My favorite things to cook
Things that are quick and easy dominate my menus--stir fry, fajitas, tostadas. Lots of cold salads during our hot summers- pasta or otherwise. I really enjoy cooking during the cooler weather though when I can bake desserts, and make soups with fresh bread.
My favorite family cooking traditions
My family is German in background (emigrated during the 1860's), and most of us started out in the midwest, so I tend to cook like I'm still there. I have added some Mexican recipes, and Southern specialties (grits, seafood).

Easy and Delicious Chicken and Rice Casserole
Just an historical perspective- this is a recipe from the 1960's; I think it was from the onion soup manufacturers. I remember my mom making it many times. It was called "Chicken on Sunday," because people would tuck it in the oven, go to church, and have dinner done when they returned. Back then, most people didn't worry about salt as much, so add less if you want of the soup. Chicken breasts were somewhat smaller, and it was usually baked close to two hours, to allow time for church to end-- that way you may find the rice and chicken are more "done."
