Make Ahead Lunch Wraps

I liked that these could be made ahead and frozen. Something quick for lunch! I also added in some extra spices as I thought they were bland. Instead of flour tortillas, use whole wheat tortillas to make this a healthy lunch as well. And when served, I added salsa on top to give it a little more kick. Good and filling.

Apple Butter Pork Loin

I thought this would be the perfect recipe as my husband loves apple butter and I had some on hand that was made by his family. I cooked it in the crockpot as many other did. Very moist and smelled great. I thought the taste was good, but husband and kids didn't. Apparently, they don't like the sweet with the savory. Also I found, the flavor didn't really go into the meat, but stayed more on top. So won't be making again.

Deer Poppers

We all loved these! We eat a lot of deer meat throughout the year. Nice change from fried deer loin. Only thing is it takes a little time to put them all together. Will definitely make again.

Pork Empanadas

I had left over pulled pork that wanted to do something with. So, I tried these pork empanadas. Took my pulled pork (slow cooked pork butt) and added seasonings and cooked a little while longer. The dough was easy to make, but VERY bland. Felt like it was a waste of my good pulled pork.

Shredded Beef Chimichangas

My husband really liked this recipe, whereas I thought it was ok. However, I didn't follow the recipe exactly. I had already cooked my roast in the crock pot and just put it on the stovetop with the seasonings and broth. I didn't have cumin on hand, so I added some southwest seasoning. I also added a little garlic and onion powder as I thought it needed something extra. I put cheese in the beef mixture and put in a skillet on the stovetop to brown. Then added cheese on top and put under the broiler for a few minutes. It was a nice change from italian beef or roast, but not sure I will do again as it wasn't a wow recipe to me.
