Mouth-Watering Stuffed Mushrooms

Seriously, sinfully good. These things will make you fall off the diet wagon. If you like cream cheese and mushrooms, these are for you. I like to toss in green onions and sprinkle a little more parm on top. My boyfriend will eat a dozen in one sitting if I let him. While this is one of my favorite things to eat ever, my sister said she took one bite and didn't care for it. I was baffled by the bad reviews, but you can't please everyone (not even people with very odd taste ;) ) 5 stars! Thanks for this great recipe. I'll be making these for years to come.

Cake Balls

I made these for a potluck with high hopes- the recipe I found was for "red velvet truffles" (sounds a little more appealing than a cake ball, doesn't it?) They were a little hard to form into balls, and some fell apart in the white chocolate coating making them a little funky looking- the white coating had red velvet chunks. I had better luck with a milk chocolate coating. The mush is the result of over-mixing. I used my hands, not a mixer. They are VERY rich- I noticed everyone taking one bite and handing them off to their significant other. That said, I made them and gave them to friends, and one friend in particular is STILL talking about them 9 months later! He said I could sell them. So- to each their own!

Delicious Ham and Potato Soup

This is a wonderful, hearty fall soup. I use red skin potatoes for color, and have used kielbasa- it gets a great smokey flavor and eliminates a few steps (peeling potatoes and dicing ham). I've also done a black pepper bacon/ aged cheddar with this soup, which has also been a big hit. Great beginners soup, very easy and the result has been restaurant quality! I daydream about this soup on rainy cold days. This one is a keeper!

Guacamole

I followed this recipe exactly (not something I normally do) and it came out completely inedible. There is WAY too much lime juice, maybe I just got a big lime, but I questioned the amount before mixing it up. My boyfriend has spent a half an hour in the kitchen trying to doctor it up he wants it to work so badly.

Awesome Slow Cooker Pot Roast

Simple Mac and Cheese

This was amazing! I'm a big mac&cheese fan and this was some of the best. The soup sounds a little strange, but with enough cheese it made it incredibly creamy (without the use of the dreaded "processed cheese food"). With that said, I used tons more cheese than it called for-about 2 cups. I used one can of soup and re-filled the can with half and half, and I added half of a kielbasa (think grown-ups mac&franks). At the suggestion of others, I used a teaspoon of minced garlic and a few shakes of hot sauce. This was restaurant quality and was even wonderful the next day. Thanks for the tasty and easy recipe!
