I really enjoyed my altered version of this recipe. I cooked 3 slices of bacon then sauteed the chicken in the bacon grease. Then, I set it aside and sauteed the spinach and mushrooms. I used a bag of baby spinach leaves and that was enough for me! As others said placing the browned chicken on the spin/mush mix then topping the whole thing with the sauce seemed to keep the chicken moist. I baked it in a convection oven uncovered for close to 40 min.(total) at 350. However, my chicken breasts were v. thick. I also used 1% milk, about half the parmesan cheese and only a sprinkling of mozz. on top the last 10 minutes.
