Chicken Tortilla Soup I

Love this recipe! I first made it according to the recipe, but I have learned that we prefer to leave out the oregano and hominy, add a bit of cumin, Ro-tel, and carrots. We prefer to load this soup up with the meat from two roasted chickens and scoop it onto some Tositos "Hint of Lime" chips. Our favorite soup :)

Chicken Tortilla Soup V

I have made this at least 6 times since discovering it a few months back, and I have taken the advice of some reviewers and alter it various ways. I change things, add things (and always include carrots and black beans), but it has never failed to be a hit at our table. So quick and easy, I make it for friends and take it for pot luck. I always buy 2 roasted whole chickens at Sam's, remove the meat, then chop roughly. I usually put a little Ro-tel and/or diced or crushed tomatoes, and serve this with Tostitos "Hint of Lime" chips. YUM!!

Chef John's Ham and Potato Soup

WIth our leftover Easter ham, I tried this recipe. My husband and children loved it! I probably put more celery and onion than listed, but otherwise stuck with the recipe. My family isn't big on soups, but they asked for seconds and to have this soup again. Simple, easy, and filling. This recipe is a keeper. Thanks Chef John!

Corn Pudding V

I have tried half a dozen corn casserole recipes from AllRecipes, but with an added egg, I like this one best. I found it must have an egg to get the right texture, and I always use Jiffy Mix for some added sweetness. I served this at a teacher's luncheon at Christmas, and have had many requests for the recipe. It is so easy and so delicious.

Holiday Cranberry-Pomegranate Sauce

This cranberry sauce is the bomb! I have never been a great fan of cranberry sauce (but I always eat it with turkey), however, I was scooping this up and eating with a spoon all day. My immediate family does enjoy pomegranate, and even those extended and skeptical guys ended up commenting on how good this was. Hands down, this is the best, and is so good I made another batch just to eat (by itself, like dessert) the week after thanksgiving.

No Bake Cookies I

Love this recipe over the other ones I have tried. Instead of the normal 2 cups, I think the smaller amount of sugar works best (I use even less). I do add more peanut butter (about 3/4 cup), and it is perfect for my taste. I make these every week for the FCA kids at school, because they keep asking for them!

Clone of a Cinnabon

These were good, but time consuming. Not exactly like a Cinnabon, but they were a nice cinnamon roll. Will I make them again? Perhaps, when my children are grown and I have a lot of time on my hands :)

Soft Giant Pretzels

I have tried several recipes for soft pretzels from allrecipes, and this one I like the least. The dough from the machine was very sticky, and all five in our family agreed not to make these again. We are big pretzel fans, yet we still haven't come across a recipe for the pretzels like we get at our mall :(

Shrimp Scampi Bake

Quick, easy, and delicious. I bought just-caught bay shrimp, peeled and deveined them, and found this simple recipe. My husband and three children aren't fans of shrimp, but not one shrimp was left on any plate.

Pasta with Scallops, Zucchini, and Tomatoes

Love this recipe! I took the advice of one reviewer and made this sauce the night before we were to go scalloping. Our attempts at harvesting scallops last labor day weekend failed due to the storms, so I added shrimp. All of our guests and family raved about this! I am making it again tonight, and we are going to try again tomorrow to get fresh bay scallops here in the panhandle of FL.

Pineapple Pretzel Fluff

Just tried this recipe, and we all loved it. My company could not figure out what the crunchy bits were, and they were surprised to find out the ingredients! I will definitely make this easy and delicious dessert again.

Pretzel Turtles

Since so many people had rave reviews, we made a ton of these as gifts for Valentine's day. I was extremely disappointed, and couldn't give them out. I used Rolos, and the chocolate stayed moist and sticky. There was no good way to pack them nicely, since the chocolate stuck to everything. The kids picked off the pecans and ate the Rolos off of the pretzel. They tasted O.K. to me, but not fabulous. I would rather have the plain, unmelted Rolo candy too.

Mall Pretzels

I have tried many pretzel recipes, and this one ranks near the bottom. We prefer the slightly sweeter and more dense pretzels at our mall. This recipe tastes like a mini-roll with salt. It would probably be best with cinnamon sugar on it, and would be best dropped in boiling water for some added chewiness. All five in my family agree this recipe is not a keeper.

Sweet and Sour Meatloaf

My family has never liked meatloaf (kids and husband), yet they love this. I have made it for my parents (who dislike meatloaf), and for a group of my in-laws (who were very skeptical, but ate it to be polite), and they were converted. Everyone who has eaten this meatloaf asks for the recipe. I make extra sauce, since everyone always wants to cover the meat in the delicious and tangy sauce.

Smooth Sweet Tea

I love barely-sweetened tea, but the bitterness always stood out. Adding the baking soda (which I had never heard of) actually made the tea great! I will make it this way from now on.
