Saltado de Vainitas (Peruvian Green Beans with Chicken)

I loved the flavour of soy, cumin, cilantro and vinegar in this dish. I did some modifications based on my preferences ( I never saute plain chicken...it must always be marinated or seasoned because I find it too bland otherwise). The base and combination of flavours and ingredients were new to me and that is why I am giving this a 5. AND it's pretty healthy!!So, I sauteed the chicken first (seasoned and marinated for a 4 hours with salt, pepper, garlic powder, cumin, soy sauce and the vinegar) then I took it out, and sauteed the onions, garlic, peppers and rest of the sauce and seasoning with the green beans until they softened...about 8-10 minutes adding the tomatoes, chicken and cilantro towards the end to heat through. Sorry to modify as the first reviewer but I really wanted to review and tell you I never would have thought to throw these things together so this recipe deserves 5 stars and for people to give it a try! Thanks!!

Teriyaki Sauce and Marinade

I am proud of myself for actually making an authentic sauce. This recipe is fantastic. I did add a bit of cornstarch and water mix to thicken but everything else was done exactly as written. My Boyfriend who is a teriyaki fanatic was so impressed by the flavour. I could eat it with a spoon, but it is going with some pork later today. I just had to review before I forgot! Thanks!!

Sunset Sangria

Mediterranean Tilapia

Thank you for a lovely recipe base. I didn't have capers so I left that out. I added garlic, feta and red onions to the mixture which I normally add to Mediterranean dishes. Very yummy and pretty to serve guests.

Grilled Zucchini Pizza with Goat Cheese

A guilt free tasty pizza!!! I added chourico for some meatiness, since I am not a vegetarian but am trying to eat low carb. I baked it at 400 for 12 minutes, then a couple minutes on broil. The goat cheese is amazing. Thanks so much for a great recipe! This is a keeper.

Dijon Grilled Pork Chops

This was very good. I did add hot sauce and some minced garlic. I think you should reserve some of the marinade to baste the pork with. That will truly make it flavourful. Great bbq recipe - thanks!

Easy Ice Cream Cake

I am not a big dessert person...I can't bake and I don't care much for birthday cake and that is why this recipe looked so interesting when thinking of what to make for my own birthday. I mixed cool whip with the chocolate frosting and put skor bits between the layers...otherwise no real chance. AND Ice cream sandwiches were on sale this week also!! Everyone loved it. Thanks so much for a simple yet creative recipe!!!

Grandma's Green Bean Casserole

Loved it. I didn't want a canned soup version and I am CDN so we are not been casserole people for whatever reason. I wanted to try it though since I had eaten it once and loved it. I just wanted to cut out soe of the processed stuff. So this was perfect. I used light sour cream, light sharp cheddar...bread crumbs in place of buttery crackers. I did add bacon because you need your protein! haha. I also sauteed the onions first as others mentioned and added garlic because those 2 go hand in hand always....it was amazing. Yes I tweaked it but the base is there and it's the first time I ever made it. Definitely going to introduce this to the Thanksgiving line-up.

Thai Steamed Mussels

Delicious and the extra broth makes a great soup for leftovers! I sauteed the garlic beforehand, and added onions because I just always use the 2 together. Then I added everything else plus some chili pepper flakes and curry powder on top of the paste...I like spice! The lime however, I added near the end because it can make it to acidic if added too early in my opinion. I also let the broth cook for 10-15 minutes to really let the flavours come together. So yummy! Thanks!

Fire and Ice Pasta

This was fabulous. The only reason I am giving 4 stars is because I find the amount of oil in this recipe to be over the top. To each, his/her own, but to those looking to lower the fat and calories - I made a 4-5 serving of this with only 1/4 cup and it is still amazing. :) Thanks for a great recipe!

Prosciutto and Provolone Panini Sandwiches

Amazing! I jazzed it up a tiny bit more because I like a hearty panini, so I sauteed spinach, red onions and garlic in olive oil and added that to the mix. Everyone loved it!

Jalapeno Popper Chicken

Apologies in advance: Tweaking ahead. First I wanted to bake it to make it healthier. I love the concept of the jalapeno stuffed chicken breast so that is why I am reviewing with tweaks, rather than post my own. Other than baking it at 375 for 20-25 minutes, I also added some cooked bacon to the cream cheese mixture, and I coated the breading with Frank's red hot....BUT I am sure this as is would be just as good. Thanks for the idea!!

Carrot, Potato, and Cabbage Soup

Warning - modifications ahead but I don't make soup often and really appreciated this as a base and the other reviews. I didn't use any white potato - only sweet and carrots, added a ton more garlic because I love garlic. I sauted the veggies first. Since I removed white potato - I added lentils which just up'd the health factor by a ton! I also love spice so I added chili pepper flakes. AND finally I added Kale at the end again to really increase the nutrients in this dish. Please don't hate me for all my modifications! Take this as a way to modify the dish to your liking. :)

Asian Orange Chicken

It is time consuming but I loved it and so did my family. I did lessen the zest as others mentioned it may be too sweet. I also saw reviews that combined cornstarch with the flour mixture to coat the chicken, and I did keep it warm in the oven so the breading wouldn't fall off in the sauce....BUT I couldn't resist not putting it back in the sauce, whereas others poured it on top after the fact. I wanted it to absorb the flavour however this does take away from the crispiness, but it's still sooooo tasty. Thanks!!

Chef John's Quick Cassoulet

Amazing!!!! My family loved this. One of this loves to eat the classic cassoulet with duck fat, but saw we were making this simplified version ...she was very impressed...people went for seconds. Absolutely amazing and hearty. I doubled the recipe and we were 10 people and it was a perfect amount. The only changes I made was sauteing garlic with the onions because garlic and onions are just a couple that shouldn't be separated. :) I used half hot turkey sausage and half chourico as my sausage component and I used a casserole dish since I don't have a iron skillet. An amazing comfort dish, will definitely be making for guests and the family again!! Thanks!!

Baked Ham with Maple Glaze

There is always a bunch of ham leftover after thanksgiving...NOT THIS TIME. They loved it...seconds, thirds....it's a first in our house. :) The only difference is ours was a boneless ham because we never invest in a bone-in since it tends to get left behind. Maybe next year that will change. ;) Thanks!

Apple Crisp II

I am not a baker. I suck at it. I am impatient and don't have a sweet tooth. However, I had apples to use up....hence this recipe. Loved it. More importantly, my guests loved it. It was all gone - one person had 3 servings. Thanks so much for making me trick my guests into thinking I was a baker! :) I did follow some other reviews and lessened the water and doubled the topping. Perfect.

Bourbon-Mango Pulled Pork

Delicious! I did decrease the bbq sauce as others mentioned...but I could have used a bit more actually...I love pulled pork with a lot of sauce. A great combo of sweet, smokey and spicy. Thanks for sharing!
