Oatmeal Pancakes II
These were good! I made them almost as directed, in the blender, with the only changes being that I used only 1/2 tsp. baking powder, 2% milk soured with lemon juice, and I added mini semisweet chocolate chips. The batter was thinner than I am used to, and they cooked very quickly, but they turned out with a nice smooth texture and very tasty!

English Royalty Chocolate Chip Scones
The scones would have been 4 stars after fixing the recipe, but I, too, had to increase the orange juice to 1/2 cup (or 8 tbs.). There is NO way this would have worked with the crumbs I had at 3 tbs. of orange juice, which knocks the recipe down another star. After this correction, the scones were pretty tasty, but the texture wasn't your traditional scone texture, which isn't surprising considering the liquid is orange juice instead of buttermilk or cream. They were good enough to make 2 batches, but overall not my favorite scone recipe.

'Calabacitas Guisada' (Stewed Mexican Zucchini)
As written, 3.5 stars. With minimal tweaking, 4.5. This is a really good side dish for Mexican main courses, like enchiladas, besides the classic rice and beans. The changes I made were adding some whole kernel corn, black pepper, and oregano to increase the flavor. I also used olive oil, quartered the zucchini lengthwise before slicing to create smaller pieces, and used a can of petite diced tomatoes instead of stewed, but that didn't make much difference. Black beans would be another tasty addition.
