Very good with a few tweaks. I puree together the cottage cheese, sour cream and about 1/3 cup milk - then stir in the cheese. It really needs a little extra moisture from the milk to help it all melt together better. I also add a little seasoned salt and a dash of dry mustard. I use fat free cottage cheese and sour cream - and skip the bread crumbs - to lighten it up a bit. I have also tried a mix of cheddar with colby jack - seems to melt together a little better than just plain cheddar.
