Curried Celery-Apple Soup with Shiitake

Surprisingly good! I was looking for a recipe that wasn't the usual miso soup in order to use up some miso, and this was it. The combination of apple/celery/shiitake is interesting, but it works. I used tofu in mine which wasn't a problem. Since I used miso, I left out the broth because I figured it would have enough sodium between that and the extra salt and I don't like a lot of salty taste, so just use your judgement when it comes to that. Otherwise, I'll definitely make this again!

Wheat Crackers

This turned out surprisingly well! I'd never tried making crackers, but they're cheap. I'll definitely make these again and add some herbs for more flavor as it seems others have done.

Orzo and Potato Parmesan

Great side dish! I had no Italian seasoning and substituted with fenugreek and parsley, but I thought the taste was really nice with a great combination of vegetables with orzo.

Broccoli and Tomato Bake

This has a great flavor! I didn't have olives or celery so did without, but I think with everything else it is plenty. I also didn't have the syrup and replaced it with honey, which I think works just as well without making it too sweet.

Basic Cheese Polenta

So easy! I always wanted to learn how to make this, and now I don't have to pay literally 10 times as much for store-bought. I used white cornmeal and skipped the cheese for plain polenta and that worked well. Great all around.
