Buffy's Refried Beans

Reviewed: Feb. 25, 2013
OMG...This was by far the best and easiest refried bean recipe, ever!!!It tastes better than the mexican restaurant. Its not the clumped mess you get in the can-obviously!!I did not use lard but alittle bacon fat and mashed them with water to get the perfect consistancy.I also added some Southwest seasoning I recieved from a friend that visited San Antonio-TX..Suckle Busters Texas Gold Dust...AWESOME!!!!I will never go back to the CAN again!!!

Moroccan Lamb Kabobs

Reviewed: Jul. 2, 2010
I was looking for a ground lamb recipe and absolutely loved the base ingredients...I omitted the raisins because I dont care much for them,I added rosemary instead of cilantro due to thats what I had on hand and prepared the mix in the morning and put them all together then chilled them all day in the fridge..That seemed to hold them together much easier..I also started them in foil on the grill and finished them directly on the grill~I was afraid they would fall apart!!Worked beautifully.Paired them with fresh tzatki sauce and cucumber and tomatoe salad with Pita on the side!!!Added to my Favorites!!Loved it!!!

Stuffed Green Peppers

Reviewed: Sep. 23, 2009
Im sorry to say I did not like this at all.I am used to not cooking the meat before baking.I like my stuffed peppers stuffed with a meatloaf type stuffing then baked.I figured I would try this to see if the cooking method was any better but I didnt like this at all. They were dry and crumbly due to cooking the meat before hand.I will stick to my old recipe from my mom.To each his own,I guess.

Spinach Bacon Quiche

Reviewed: Sep. 14, 2009
Im really sorry to have rated this only 3 stars but this recipe should be tweeked for 2 reasons..way too much milk made this watery and runny, also the eggs didnt set well because of it.Also, the crust was ultra soggy, almost gooey!Next time I make this I will pre-bake the crust and cut the milk to one cup instead of 2.I also sauteed the onions in a teaspoon of the bacon drippings and added them to the mix instead of raw onion.Hopefully that will make this better.I will definitely try this again being sure to add my changes!

Corned Beef Hash

Reviewed: Jul. 20, 2009
This was excellent..I used chicken broth instead of beef broth and the subtle chicken flavor complimented the potatoes and didnt take away from the corned beef flavor.I also used my leftover corned beef.I cannot stomach the thought of canned beef..Sorry.It was easy and delicious.Thanks.

This was delicious. The only thing I changed was adding swiss cheese instead of provolone..The swiss went perfectly with the asparagus. It was even great the next day with a small salad.Yummy!

Calamari

Reviewed: Dec. 12, 2008
I would just like to add that a good dipping sauce would be a spicy marinara.Just make or buy your favorite marinara and add crushed pepper flakes.Serve the sauce at room temperature or cool. The more pepper flakes the better. The lemon wedges will cool the heat.
