Mexican Rice III

Swiss Chard with Pinto Beans and Goat Cheese

I loved this recipe! I did have to go all the way across town to the fancy grocery store for swiss chard, but it was really worth it! I think this has to be a brand new favorite for me!

Skillet Ham, Cabbage and Potatoes

This was great. I really liked how hand's off it was. I was able to multi-task while it was cooking. My husband loves cabbage so I am experimenting with ways to cook it and this is a keeper. I will make again.

Sweet and Spicy Sweet Potatoes

These are addicting. I want to make them again and again. I used to buy the Alexia spicy sweet potato fries, but I think these are better! They were perfect with grilled chicken! Love these!

Garlic Chicken

This gets five stars because easy does not always mean good. This is one of those cases where you can have the best of both worlds. It was easy to make. The taste was great. My husband said we should make it again next week and we never do that =).

Spinach, Egg, and Pancetta with Linguine

I really liked this recipe. It was really salty because I salted the pasta. I don't think I'd do that again because the Pancetta was salty enough. I used four cups of spinach and half a box of pasta. I agree with others that a whole box would have been far too much. YUM.

LOVED! This was an awesome marinade! We already had almost all of the ingredients so it was fairly inexpensive to cook! I would make again. My husband burned it a little so I can't speak to the moistness, but the flavor is great! Don't change a thing!

Old Fashioned Meat Loaf with Tangy Tomato Sauce

Yummy! This was really good meatloaf! It tasted great. I accidentally omitted the onions, but I didn't miss them. It doesn't make a whole ton which is good for my household.

Bean and Bacon Salad

Crispy Orange Beef

YUMMY! This was great. My husband usually doesn't like asian type foods, but he really liked this one. It is a winner! The smell when it is cooking is enough to make you anxious for it to finish. I would make again!

Broiled Tilapia Parmesan

This was a great recipe! My two year old proclaimed that he loves fish! I will make this again. It doesn't need any changing. It is great the way it is written! The foil also makes for an easy clean up!
